RECIPE OF THE WEEK
Quick Frozen Peach Yogurt

peach frozen yogurtThis delicious dessert is simple to make and is actually good for you! Peaches contain potassium and vitamins C and A -- and this refreshing treat has less fat and calories than ice cream. Our thanks to EBNHC Nutritionist Carol Singletary for this recipe!

Yields one large serving or two smaller servings.

Ingredients

  • 2 fresh peaches, washed, pitted, and cut up
  • 8 ounces (small container) low-fat or fat-free yogurt (plain or vanilla)
  • 1/8 tsp (just a little bit!) almond extract (optional)

Directions

  • Put the cut up peaches in a container and freeze (about two or three hours).
  • Using a blender or food processor, blend the frozen peaches with the yogurt and extract until smooth. Serve immediately.
