RECIPE OF THE WEEK
Gazpacho!

 

red gazpachoIt's tomato season, which means it's gazpacho time! Gazpacho is fresh and cooling, and incorporates many fresh vegetables that you can find at the market.  

 

Ingredients:

  •  1 1/2 pounds ripe tomatoes (about 3 large tomatoes)*
  •   1/2 green pepper*, chopped
  •   1 clove of garlic* (add 2 if you are a garlic lover)
  •   1/2 cucumber*, peeled and sliced
  •   1 tablespoon olive oil
  •   4 tablespoons red wine vinegar
  •   1 slice of bread*, crust removed
  •   salt

Directions:

 

Blanch the tomatoes and remove their skin. (How? Bring a medium sized pot to a boil. Cut an "x" into the bottom of your tomatoes. Add tomatoes and leave for three minutes. Remove each tomato and squeeze it to remove its skin. It should slide out through the "x").

 

Place the slice of bread in a bowl with water to soften. If you want, you can cut off the crusts, chop them into pieces, and toast them into "croutons" for use as a garnish later.

 

Add the tomatoes into the blender or food processor. Add the pepper, cucumber, garlic, and slice of bread. Blend for a few seconds and add the salt, vinegar, and oil, tasting it until it tastes right to you. Pour into a big bowl and chill in your fridge for at least one hour.

 

When ready to serve, pour into separate bowls.

 

Chop up the other half of your pepper and cucumber and use as garnish. Top with the toasted crust "croutons" if you made them.
