Eat the Rainbow at the Farmers Market  

August is peak season for many of your favorite fruits and veggies!

 

Things are really starting get colorful at the East Boston Farmers Market! August is upon us and the harvest season is in full swing. As you scan the market, you'll notice the vibrant array of fruits and veggies from all over the spectrum: deep purple eggplants; rich red raspberries; verdant peppers, lettuce, and basil; bright orange carrots, and more!

 

There's nothing quite like the taste of fresh produce that has been picked just hours earlier, and it's easy to enrich your diet with a variety of nutrients by shopping at the Farmers Market. Did you know that the color of a fruit or vegetable will often indicate the specific vitamins and other nutrients present in the item? For instance: dark, leafy greens like kale and spinach have high levels of iron (for healthy blood) and calcium (promotes bone health). Carrots and sweet potatoes, bright orange in color, are high in beta carotene, which is a powerful antioxidant and may prevent certain types of cancer. So, eat the rainbow and give your body -- and your tastebuds -- a colorful burst of healthful flavor!

RECIPE OF THE WEEK
Very Balanced Veggie Quesadilla

 

Veg QuesadillaThis healthy, kid-friendly meal comes from the kitchen of Eleanor Chandler, East Boston Farmers Market Manager. We used this recipe in our Let's Get Movin' nutrition lessons this week and they were a hit! We bet you'll love them, too!

 

(Serves four)

 

Ingredients:

  • 4 whole-wheat tortillas
  • 1/2 cup canned beans (black or pinto), drained
  • 1 or 2 cloves minced garlic* (optional)
  • 2 cups chopped fast-cooking vegetables (spinach*, chard*, peppers*, tomatoes*, green onion*, avocado, mushrooms)
  • 1/2 cup shredded part-skim mozzarella cheese
  • Hot sauce (optional)

Directions:  

  1. Using the back of a fork, mash the beans.
  2. Add the garlic (if using) and mash well.
  3. Spread the bean mixture evenly over one half of the tortilla.
  4. Spread the vegetables on top of the beans.
  5. Sprinkle the cheese on top of the vegetables.
  6. Fold the empty side of the tortilla over the fixings.
  7. Place in toaster oven or microwave until cheese is melted and tortilla is lightly browned.

  • WIC participants can save in two ways with the WIC Farmers Market Nutrition Program and with WIC Fruit & Vegetable vouchers. The East Boston Farmers Market is the only market in the city of Boston participating in this new nutrition voucher program.
  • Seniors can use their Farmers Market Nutrition Program coupons at the market
