Veggie Circus and Food Sampling!

 

Thanks to all who visited us at last week's opener! Join us today for more farm-fresh festivities and check out all that the East Boston Farmers Market has to offer! Remember, we're here every Thursday until October 20 for farm-fresh fruits and vegetables, honey, and fresh-baked bread! Check out our list of vendors on the left-hand side of this e-mail.

 

Did you miss last week's giant hula-hoop contest? Don't fret -- the Vegetable Circus will be back again to twist, turn, and hula with us. In addition, UMass Extension will be distributing free samples of their delicious Cool Summer Salsa, which uses produce that you can find at our very own market! Don't miss it!

 

**Note to EBNHC providers** Today is WIC's one-time farmers market check distribution day. From 11am to 5pm, WIC participants can pick up their farmers market checks at the WIC office. Between 3pm and 5pm, there will be guided tours from the WIC office to the farmers market. Please let any of your patients who might participate in WIC know about this special day. It is their only opportunity all season to pick up these seasonal checks.

RECIPE OF THE WEEK
Vegetable Quesadillas

This delicious and easy quesadilla recipe is adapted from Healthy Latino Cooking (Cocina Latina Saludable), a healthy recipe book created by Let's Get Movin.' Ask Eleanor or Ali how you can get your own copy!

   

Ingredients:

quesadillas

  • High-heat oil for cooking (safflower, sesame, and corn oils all work well) 2 green bell peppers, sliced*
  • 1/2 cup corn (about two ears' worth)*
  • 1/2 cup tomato, chopped (one or two medium-sized tomatoes)*
  • 1/2 cup green onion, sliced (about 3 or 4 stalks)
  • 2 tablespoons fresh cilantro, chopped*
  • 4 whole-wheat or corn tortillas
  • 1/2 cup shredded low-fat mozzarella cheese 

 * Indicates you can find it at the East Boston Farmers Market this week!

 

Directions:

 

1. Drizzle about 2 tablespoons of oil into the pan. Saute green bell pepper and corn until softened (about 5 minutes).

 

2. Add green onion and tomato. Cook until the vegetables are heated through.

 

3. Heat the whole-wheat or corn tortillas in a separate pan. Place the cheese and vegetables on the tortilla while it is still in the pan. Fold the quesadilla in half and continue to cook until the cheese is melted and the tortilla is lightly brown. Enjoy!

Community Resources

Families and individuals that qualify can use a range of vouchers and coupons to make fresh fruits and vegetables even easier to purchase.

  • SNAP/EBT participants can use their cards at the market and receive 50% off purchases up to $20, thanks to the Boston Bounty Bucks program sponsored by the Food Project and the City of Boston.
  • WIC participants can save in two ways with the WIC Farmers Market Nutrition Program and with WIC Fruit & Vegetable vouchers. The East Boston Farmers Market is the only market in the city of Boston participating in this new nutrition voucher program.
