THIS WEEK AT THE FARMERS MARKET: July 7, 2011
The East Boston Farmers Market Opens Today!

Yes, it's that time of year again! Join us today and every Thursday until October 20 for farm-fresh fruits and vegetables, honey, and fresh-baked bread! Check out our list of vendors on the left-hand side of this e-mail.

In addition to delicious treats, this season's market will feature a variety of special guests and activities for the whole family! This week, our friends from the Vegetable Circus will be making their 2011 season debut (you may remember them from last year). Come jump, stretch, juggle, and hula-hoop with us and learn about why veggies are such an important part of our diet.

RECIPE OF THE WEEK
Sassy SaladSassy Salad

From Eleanor and Ali of the East Boston Farmers Market

Salad doesn't have to be boring. This is one of our favorites, and it's spiced up with berries, nuts, and cheese! With all of the glorious greens popping up at the Farmers Market today, you'll no doubt find some inspiration to head home and create this cooling, crunchy meal. It's quick, easy, and requires no heat to prepare!

Ingredients:

1 head of lettuce*

3 large handfuls of arugula*

3 large handfuls of spinach*

1 cucumber*

8 radishes*

3 green onions*

1 pint strawberries*

4 ounces goat cheese, parmesan cheese, or your favorite variety!

1/2 cup walnuts or almonds, or any nut, really!

Dressing:

olive oil

balsamic vinegar

salt

pepper

brown sugar (optional)

 * Indicates you can find it at the East Boston Farmers Market this week!

Directions:

1. Wash the produce. Wash lettuce, arugula, and spinach thoroughly. If you picked them up at the market, they might still have a bit of soil on them, so you can soak them in a big bowl of water to remove the sand and grit. Rinse the cucumber, radishes, green onions, and strawberries as well.

2. Prepare the produce. Tear the lettuce, arugula, and spinach into manageable bite-size pieces. Cut the cucmber and radishes into thin slices. Dice the green onion. Chop the strawberries. Throw them all together into a big bowl and toss.

3. Add the extras. Crumble (or shred, depending on the cheese you choose) the cheese and throw into the bowl. Sprinkle the nuts on top. Toss with your favorite dressing, or use the recipe below!

Dressing:

Mix 1/4 cup balsamic vinegar and 3/4 cup olive oil in a bowl. Add salt, pepper, and a bit of brown sugar to taste.
