Recipe from Hungry Girl: Yummy
Yummy Eggplant Goo Are you a hungry girl or guy? If so, here's a delicious recipe from
Hungry Girl herself Lisa Lillien's brand new book, Hungry Girl Happy Hour. This easy to make dip recipe packs in several
colorful and nutritious veggies to help you meet your daily veggie
quota, and tastes great when paired with baked or toasted whole wheat
pita or corn tortillas, cut into triangles.
PER SERVING (1/4 cup): 37 calories, 1g fat, 295mg sodium, 7g
carbs, 2.5g fiber, 3g sugars, 1g protein Ingredients 1 medium-sized eggplant, peeled,
cut into 1-inch cubes I red onion, chopped ½ red
bell pepper, chopped ½ yellow bell pepper, chopped ¼ cup
halved cherry tomatoes 1 tablespoon chopped garlic ½
tablespoon olive oil 1 teaspoon salt ¼ teaspoon black pepper 1
tablespoon tomato paste Directions Preheat
oven to 400 degrees Arrange
all vegetables in the bottom of a baking pan sprayed with nonstick
spray. Sprinkle with garlic, olive oil, salt, and black pepper. Toss
well. Place
pan in the oven, and roast for approximately 40 minutes, mixing
occasionally, until vegetables are tender. Once cool enough to handle, place
the contents of the pan into a blender with the tomato paste. Pulse
several times. Dip should be chunky, not smooth. Proceed with dipping! MAKES 8 SERVINGS
