Greetings!

Hope you're all diving into and enjoying summer!

In this week's ZIED GUIDE™ newsletter, you'll find recipes to help you work in some delicious and flavorful seasonal fruits and veggies to help you meet your daily quota (most of us fall short of what's recommended--about 3.5 to 4.5 cups per day according to the current Dietary Guidelines for Americans).

You'll also find some of my recent articles and blog posts-- if you're a new mom, you'll learn about common Mommy eating traps; you'll also learn what the Ultimate DIET is all about.

In the ZIED GUIDE™ blog, you'll learn about why I decided, after careful consideration, NOT to submit a 3 minute tape to have my very own TV show on Oprah's new OWN network.

Please continue to send me your questions and ideas for future blog posts, articles, and simple Q and As..you may see them soon on msnbc.com, caloriecount.com, on Galtime.com, or on The ZIED GUIDE™ blog. Have a great day and if you enjoy this newsletter, please forward to a friend or post on Facebook or on Twitter

Recipe from Hungry Girl:
Yummy Yummy Eggplant Goo

Are you a hungry girl or guy? If so, here's a delicious recipe from Hungry Girl herself Lisa Lillien's brand new book, Hungry Girl Happy Hour. This easy to make dip recipe packs in several colorful and nutritious veggies to help you meet your daily veggie quota, and tastes great when paired with baked or toasted whole wheat pita or corn tortillas, cut into triangles.

PER SERVING (1/4 cup): 37 calories, 1g fat, 295mg sodium, 7g carbs, 2.5g fiber, 3g sugars, 1g protein

Ingredients
1 medium-sized eggplant, peeled, cut into 1-inch cubes
I red onion, chopped
½ red bell pepper, chopped
½ yellow bell pepper, chopped
¼ cup halved cherry tomatoes
1 tablespoon chopped garlic
½ tablespoon olive oil
1 teaspoon salt
¼ teaspoon black pepper
1 tablespoon tomato paste

Directions
Preheat oven to 400 degrees

Arrange all vegetables in the bottom of a baking pan sprayed with nonstick spray. Sprinkle with garlic, olive oil, salt, and black pepper. Toss well.

Place pan in the oven, and roast for approximately 40 minutes, mixing occasionally, until vegetables are tender.

Once cool enough to handle, place the contents of the pan into a blender with the tomato paste. Pulse several times. Dip should be chunky, not smooth.

Proceed with dipping!

Oh How Sweet...Strawberries!
Squeeze It In

"Some studies show that consuming strawberries may even lower levels of homocysteine, an amino acid-high levels of it is linked with an increased risk of cardiovascular disease and stroke."
The Ultimate DIET
Squeeze It In

"Imagine a diet that includes ALL your favorite foods, and doesn't require you to buy special foods or clear out (if not fumigate) all your cabinets or the shelves in your refrigerator. Take it a step further-imagine a diet that's not something you repeatedly go on and off of, but one that you can live with day in and day out- one that actually becomes a way of life instead of a transient state of eating."
