Feast For Foote

A DAY IN THE LIFE OF FOOTE

It's Maple Sugaring Time!
tapping
Making maple syrup requires several steps, all of which Foote students were able to witness this week. Business manager and former teacher Jay Cox, with his brother Pete, a member of the maintenance staff, coordinated Foote's efforts. The pair grew up on the campus of Phillips Exeter Academy in New Hampshire, witnessing and eventually  participating in the sugaring process.

Step 1: Tap the maple tree using a spigot and a bucket.

Step 2: Pour the sap into a heat-proof pan over a fire to reduce it. Stir every so often. Be very careful.

Step 3. Let reduced sap cool.  Strain through cheesecloth into a stovepot. Watching closely, bring to a boil.

Step 4: Serve to eager kindergartners celebrating Pajama-Pancake Day.

In France and at Foote, a Fruitful Celebration

Modern language teacher Angela Giannella coordinated a small but artistic tribute recently to France's La Fete du Citron, or Lemon Festival. The festival celebrates citrus fruits for two weeks each winter in Menton, a city on the French Riviera. Lemons, oranges, limes, and other citrus fruits are used in astoundingly artistic ways in festivals, a parade with floats to rival Macy's Thanksgiving Day parade, art exhibits, and more. Science teacher Tim Blauvelt erected Foote's very own Eiffel Tower in the main lobby.
