Easy Strawberry

Rhubarb Cake

  

This recipe is super easy, delicious, and always a big hit!

 

Ingredients: 

 

 1 pound rhubarb, cut into 1/4-inch slices
 3/4 cup sugar
 1 (3-ounce) package strawberry flavored gelatin mix
 1 (18.25-ounce) package yellow cake mix
 1 cup water

 1/4 cup margarine, melted

 

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Grease a 9- by 13-inch baking pan.
  3. Spread the rhubarb evenly in the bottom of the baking dish.
  4. Sprinkle the sugar over the rhubarb, then the gelatin mix, and finally the cake mix.
  5. Pour the water and melted margarine over the top. Do not stir, but make sure the dry ingredients are evenly covered by the wet ingredients. If needed, take a spray bottle and lightly mist water over any spots that were missed.
  6. Bake for 45 minutes or until the rhubarb is tender.

Enjoy!
