Peanuts 

It's National Peanut Month! Peanuts are a tiny food with a big impact, contributing more than $4 billion to the U.S. economy each year. Almost half of the U.S. peanut crop is made into peanut butter. The average peanut farm is 100 acres, and there are enough peanuts in just one acre to make 30,000 peanut butter sandwiches. That's a good thing, since the average child will eat 1,500 peanut butter and jelly sandwiches before he graduates high school!


Peanuts are not only good for our economy, but they are good for us too. They are a great source of protein and antioxidants and are naturally cholesterol free. Don't let the name fool you, though. They are actually legumes, not nuts! You can find out more fun facts about peanuts from the National Peanut Board and Skippy.


In this week's newsletter, I'm going to share everything you need to know about peanuts, including alternatives for those of you with peanut allergies.

Homemade Peanut Butter Cups

  

 

These peanut butter cups are yummy and easy to make!

Ingredients

 

2 cups powdered sugar
1 1/2 cups smooth peanut butter
2 tablespoons shortening
16 ounces semisweet chocolate
25-30 mini muffin wrappers

 

Directions

  1. Mix the sugar, peanut butter, and shortening togehter with an electric mixer using a paddle attachment. Beat on medium-low speed until well mixed. Put the mixture into a pastry bag fitted with a half-inch plain tip, or just leave the tip off and set aside.
  2. Melt the chocolate in a double boiler over simmering water. Using a small spoon, drop about half a spoonful of chocolate into a mini muffin wrapper and then use the back of the spoon to smooth the chocolate over the sides and bottom of the wrapper until it is covered. Repeat with each mini muffin wrapper and then set them in a mini muffin pan or a rimmed baking sheet. Put the pan in the freezer for about 10 minutes, or until set.
  3. Remove the cold chocolate cups from the freezer. Add peanut butter filling into each cup until it is about three-quarters full. Cover the peanut butter with the remaining melted chocolate. Return to the freezer for about 20 to 25 minutes or until set. Peanut butter cups may be served right away or kept in a sealed container in the freezer.
