 SCHEDULE CHANGE FOR EGGONOMICS 303 
Eggonomics 303 classes, "Perfect Prime Rib" and "The Ultimate Crown Roast", will be held on Monday, March 22 and May 24 respectively.  Tuesday classes will be only be scheduled in the event the Monday classes sell out and there is a sufficient number signed up on a waiting list.  If we have 20 or more signed up on the waiting list for Monday we will schedule a second course on Tuesday.

    The derivation of the term is uncertain. Some suggest it is a contraction of the phrase "dispatch the cock" but I'm not sure about that. It just sounds unlikely. Similarly, the inventor of this technique is also unknown, but it is used widely throughout the world in recipes that call for the grilling of a whole bird because it results in deliciously moist flesh throughout, every time. And I mean, every time. It's almost a fool-proof recipe assuming that you have a moderate level of control over your limbs and have some concept of fire-safety. Here's how to do it:

Difficulty: Medium

Prep Time:20 minutes

Cooking time: 1 hour or until breast temperature is at 160 degrees and thigh is at 180 degrees.

Ingredients:
   1.   1 or 2 whole roasting chickens (3-4 lbs) each
   2.   Dizzy Pig Dizzy Dust

   I like to halve the chickens too, as they are easier to handle. Once the chicken has been prepped, season liberally with Dizzy Dust. Work the rub well under the skin as much as possible.
    Pre heat your grill to 375 degrees while letting chicken warm up a little bit.

Put a raised grid on your Egg

Recipe for a raised grid follows.

Difficulty: Easy
Time: 5 Minutes

Ingredients:
1.  Four 4" Bolts
2.  Eight fender washers
3.  Eight nuts

Directions:
1.  Thread a nut about 1/2"-3/4" down the bolt
2.  Place washer on bolt
3.  Place grate on washer
4.  Put washer on grate
5.  Thread another nut on bolt
and tighten
6.  Repeat with three other bolts

Place chicken skin side up with thighs and legs towards the center and cook for about 45 minute - 1 hour.


 Notice that the cooking grate is almost even with the felt gasket.
