Vegetable Juicing

An Easy Recipe to Get You Started
Ana Casas M.D.

Vegetable juicing is an easy way to be sure that you get the nutrient dense, low calorie foods that you need on a daily basis.

I would like to share with you a simple and tasty recipe that requires only a blender. I recommend the Vita-Mix as it is a versatile tool that you can use to prepare this recipe in just minutes. If you don't have a Vita-Mix, any high quality, high speed blender will do. I use my Vita-Mix on a daily basis as part of my healthy aging nourishment plan. It is really a versatile tool for fast food preparation.

The Vita-Mix website is worth visiting to obtain free, nutritious recipes like the one I share below.

Remember to look for recipes that have about equal carbohydrates, protein and fat content. This will provide you with hormonally balanced nutrition that optimizes body fat loss by keeping your insulin level low.

Gazpacho

A delightful soup that is a liquid salad
Jumping Girl

Gazpacho is a cold Spanish tomato-based raw vegetable soup, originating in the southern region of Andalusia. Gazpacho is widely consumed throughout Spain, neighboring Portugal (where it is known as gaspacho) and parts of Latin America. Gazpacho is mostly consumed during the summer months, due to its refreshing qualities.

The following Gazpacho recipe is not only nourishing but a hormonally correct meal. It balances carbohydrates, proteins and fats in the correct ratio to keep your insulin level low and keep you satisfied.

It is an excellent soup to have for lunch or dinner. It is nutrient dense and full of vitamins, minerals and phytonutrients.

GAZPACHO

1/2 cup peeled and diced organic cucumbers

3/4 cup peeled and diced red and green bell peppers

3/4 cup diced onion

2 organic plum tomatoes, peeled and diced (one cup)

2 1/2 cups organic tomato juice

2 Tablespoons extra virgin olive oil

2 garlic cloves

8 ounces crab meat

2 tablespoons fresh lemon juice

1/4 teaspoon black pepper

1/4 teaspoon worcestershire sauce

Place all of the ingredients in your blender or Vita-Mix and puree.

Pour the soup into a container, cover tightly and refrigerate until cold.

This soup makes 8 servings.

The best part about this soup is that it is low in calories and nutrient dense. The carbohydrates, protein and fats are balanced.

You can drink a bowl of this soup and have another bowl if you are still hungry.

It is nutritious and quite satisfying and provides your body with the nourishment that it needs without having to count calories or spend a lot of time in food preparation or cooking.
