New Lean Beef Cuts for your Meat Case
Now there are seven more new cuts that qualify as lean - and research has shown a demand for "lean" and today's shoppers are actually willing to pay more for lean beef cuts. Data just released in the latest edition of USDA's Nutrient Database show that seven of the eight Beef Alternative Merchandising (BAM) cuts meet government guidelines for lean. Add these beef items to your meat case and utilize nutrition labeling program to help consumers identify lean cuts and deliver a "lift" in sales. CUT SPOTLIGHT: Veal Cutlet
Expand veal sales in Q1 by featuring and stocking the Veal Cutlet, which will be showcased in a checkoff promotion running Jan. 16-March 31 to raise awareness of how veal can be part of a healthy diet and encourage consumers to prepare veal more often at home. Now through Dec. 15, retailers can sign up and receive free on-pack recipe labels for Veal Cutlet Piccata and other supporting materials for use in stores, weekly ads and online. What Influences Consumer Purchases? In recent years, shoppers have altered shopping behaviors due to the recession and higher food prices, but while low prices play a role in purchase decisions, 61% of consumers rate "good value" over "low prices" when deciding which store to shop at, according to a 2011 Nielsen survey of more than 25,000 global consumers. Good value was defined by all consumers as sales and promotions and larger, economy product sizes. When looking at North America shoppers specifically, they indicated preferences for value packs (39%) and smaller packages at lower prices (20%).
