To Your Health An easy recipe for the holiday season & beyond
Are you looking for a holiday treat that tastes great, freezes well and is easy to make? Look no further than this sweet treat that tastes a lot like eating a coconut covered donut hole.
RAW SNOWBALLS 1 Cup raw almonds 1 generous cup pitted & soaked dates (soak for 30 minutes +) 1/2 tsp pure vanilla extract 1/2 tsp cinnamon 1/2 tsp nutmeg A pinch of sea salt 1/4-1/2 cup finely shredded zucchini 1 Cup shredded or flaked coconut, divided
Process Almonds in food processor until they are crumbs. Add vanilla, cinnamon, nutmeg and sea salt to the mixture while the almonds are processing. Then slowly add softened dates to the mix allowing a few to process before adding more. Add enough dates that the processed mix turns into a ball of dough. This may take a few more dates than one exact cup. Knead zucchini and a 1/2 cup of coconut into the almond/date dough. When well combined, part dough into one inch balls and roll to coat in the remaining coconut. Place balls on a pan in the freezer to set. Store bagged in the freezer & enjoy regularily! Serve thawed but cool.
