This Little Piggy Went to Market

Chef Cavanaugh has been invited to join a panel of speakers key to the PA sustainable food movement at the Academy of Natural Sciences in Philadelphia as part of National Food Day. Dr Tom Parsons from New Bolton Swine Center will speak about his work humanely raising piglets, Phil Landis will describe the "high touch" Sweet Stem farm he and Dee operate, Bruce Arndt from Stoney Point Farm Market will speak about the critical role of slaughter/processing from both the point of view of opportunities and challenges, and Chef will speak about his commitment to whole carcass utilization and humanely raised local meats. There will be a moderated question and answer period to conclude the program. Join us if you can - it's sure to be a lively conversation!

New On Tap
Exciting things are happening on JJJ's frosty taps this month with three new breweries making first-time appearances! While we maintain our commitment to all the amazing local breweries in the area we have decided to branch out a bit to highlight some exceptional American beers that share our commitment to sustainable business practices.
Wolavers Located in Middlebury, Vermont, this brewery uses 100% organic hops and malts.
Currently on tap: Organic IPA
Philadelphia Brewing Company Located just a hop, skip, and an Amtrak ride away, this brewery shares a comittment to local business by using local grains in some of its beers and also limited sales to a local distribution in keeping with the philosophy that beer is meant to be consumed fresh and the best way to manage that is to limit sales to places where they can ensure that you are getting the freshest beer possible.
On tap next weekend: Walt Wit, a Belgian-style white ale
Duquesne This is a classic, a beer that doesn't pretend to be anything else, a no-fuss beer proud of its Pittsburgh roots - no super-hopped or floating blueberries here! And darn good too. The Duquesne Pilsener recently claimed a Silver Medal in the 2011 World Beer Championships.
