Sustainable Wines at JJJ
The mission of JJJ to provide a menu full of local and seasonal foods sourced from farms that practice sustainable agriculture is probably not news to you if you are on this email list. But did you know that this missions holds true when it comes to our wine list as well? Our wine list is carefully composed of wines selected for their quality and also for their low impact on the environment. Here is a quick breakdown on the definitions of the terms you will see in relation to the wines on our list:
Biodynamic = The wine is 100% organic, plus the grower has gone beyond to try to bring the farming process more closely in tune with nature.
Organic = The wine has 95% organically grown ingredients (the other 5% must not be available organically). On the label, you'll see the USDA organic symbol. No sulfites are added, though the wine can contain naturally occurring sulfites.
Sustainable = Although there are no set standards, wineries that take the ecology of the vineyard into account, and try to minimize chemical treatments and energy use, are called sustainable.
Local = While the local PA wines on our list may or may not fall into the categories above, they do still align with the mission of Jeffries by supporting local business and decreasing the impact on the environment through lower fossil fuels for transportation.

Dining when out of Town (How to survive without JJJ)
If you are anything like us, the thought of traveling to unknown destinations brings out mixed feelings including the excitement of exploration and the trepidation of being without JJJ for fabulous and conscientious dining. But that need not be the case! There are some excellent resources for finding other like-minded eating establishments when you are out of town and here are our favorites:

We would also like to give recognition to Chipotle which has saved us many times when a quick bite was needed. On a trip to Virginia this summer we were delighted to see that the Chipotle in Charlottesville sources their pork from Polyface Farm's Joel Salatin - everyone's favorite farmer/hero from Food Inc!
