Festivals Acadiens et Créoles
Festivals Acadiens et Créoles celebrates the spirit of the Cajun and Creole people Oct. 8-10 in Lafayette, the heart of Louisiana's Cajun Country. Festivals Acadiens is dedicated to Wayne Toups, easily one of the most influential Cajun musicians of our time. Festivities get started with Bach Lunch, a free lunchtime concert in downtown's Parc Sans Souci. Things kick into high gear Friday evening with Downtown Alive! a Lafayette tradition for over 20 years, and the Cajun Field Fais Do Do that takes place during tailgating before the University of Louisiana-Lafayette vs. Oklahoma State football game. Picturesque Girard Park is the setting for Cajun and Creole music and food, and Louisiana crafts Oct. 9-10. The weekend is a showcase of the best in Cajun and Creole music, including performances by GRAMMY Award winning musicians, workshops and jam sessions. Crawfish etouffee, seafood Boudin balls, soft shell crab poboy, seafood gumbo and BBQ pork chop sandwiches - you can find all this and more as the area's best restaurants turn out to showcase their finest specialties. The newest addition, Culture Sur la Table (Culture on the Table), presents area chefs, home cooks and others demonstrating how some of your favorite dishes get from the field to the table. The Louisiana Crafts Fair presents traditional and contemporary artisans demonstrating and selling fine crafts. For hotel packages, go to http://tinyurl.com/FAeChotelpkgs.
Seafood Gumbo
The first hint of cool weather brings out the gumbo pots in kitchens across South Louisiana. You can make gumbo with a variety of ingredients from seafood, to chicken, duck, smoked sausage, andouille and even meatless. Some people use okra, others use tomatoes. The one thing that every gumbo has in common - you start with a roux (a mixture of oil and flour that is browned in an iron skillet). Chef Patrick Mould's recipe for seafood gumbo uses shrimp, crabmeat and oysters. The key is to use the freshest ingredients you can find. Get recipe here
