It's Time to EatLafayette™!
In Louisiana, some of our fondest memories and heartiest celebrations involve coming together with loved ones to share a good meal. In the spirit of this tradition, over 50 locally-owned restaurants have come together for a two-month celebration of local cuisine. In its sixth year, the 2010 EatLafayette™ runs from June 21 through Aug. 15 with participating restaurants offering a variety of cuisines and some great specials. New this year, the official EatLafayette™ website, www.eatlafayette.com, gives users the option to browse the restaurants either by name or by food type. The website also includes information about the Caribbean Cruise Giveaway, which gives diners a chance to win a free four-day Carnival Cruise for two courtesy of Travel Machine. For information on participating restaurants, go to www.eatlafayette.com or find EatLafayette™ on Facebook, Twitter, YouTube or Foursquare.

Recipe of the Month
Pat's Crawfish Etouffee
Étouffée (pronounced ay-too-fay) is a French term meaning to smother, which refers to the cooking technique where meat is cooked down with onions and commonly served over rice. Crawfish is probably the most popular type of etouffee, but etouffee can also be made with shrimp, chicken or any kind of meat you desire. Crawfish are freshwater crustaceans found in swamps, ponds and marshes. Louisiana leads the nation commercial crawfishing, producing more than 90% of the domestic crop. The total economic impact on the Louisiana economy exceeds $120 million annually, and more than 7,000 people depend directly or indirectly on the crawfish industry.  Get recipe here
