Crawfish Recipe
Pat's Crawfish Etouffee
The French word étouffée (ay-too-fay) means to smother, referring to a method of cooking that calls for the slow sweating of seasoning vegetables in a fat until a kind of sauce is produced. Crawfish have gained in popularity over the last half century and now can be found in every grocery store in South Louisiana and can be shipped anywhere in the U.S. During crawfish harvesting season, which typically runs February through May, crawfish ponds can be seen from every highway and byway.
