Mixologist Alba Huerta of Houston's Grand Prize Bar took home first place and $1,000 at the On the Rock's Bartender's Contest for her 

Copa de Maya. Lucky for you, she's agreed to share her award-winning recipe. 

 

Copa De Maya

 

2 oz. Blanco Tequila

1 oz. Jasmine Honey Mix*

3/4 oz. of Lemon Juice

3 Whole Cloves

1 Egg White

 

*Jasmine Honey Mix: First make jasmine tea. While still hot, reduce with equal amount of honey until honey is fully dissolved. 

 

Method:

Muddle the cloves (or crush the cloves with the back of a spoon in the bottom of a glass), add remaining ingredients and shake without ice. Add ice and finish shaking. Double strain and serve in a cocktail glass.

NV Lini Labrusco Lambrusco ($14) 

It's purple, it's fizzy, it comes from Italy, and it's really good, the latter part being what separates it from most Lambruscos.

 

'09 Crios de Susanna 

Balbo Malbec ($15) 

Malbec was made for grilled meat (that may explain its popularity in Argentina, where people eat something like 125 pounds of beef each year, per person). Susanna Balbo, one of Argentina's greatest winemakers, has a knack for the grape, which this juicy, lightly spicy red makes clear.

 

'09 Foxglove Zinfandel ($14) 

Bob and Jim Varner produces terrific, high-end wines under their own name, and inexpensive, wonderful wines under the Foxglove label. There's a little Petite Sirah in this which adds some backbone to Zinfandel's lush fruit.

Here's a summertime recipe from Chef Balfour you can prepare right at home to impress the most serious of food lovers.

Citrus Crab Cake

 

2 pounds Jumbo Lump Crab

Juice of 1 Lime

4 Green Onions Sliced

1 Roasted Red Pepper Diced

2 Seedless Roasted Jalapenos Diced

1 tsp Chili Powder

˝ Bunch Cilantro Chopped

1 Avocado

1 cup Coarse Chopped Roasted Pumpkin Seeds

1 cup Mayonaise

˝ cup Japanese Breadcrumbs (Panko)

Salt and Pepper to Taste

Red Chili Oil

 

Method:

Fold all ingredients together being careful not to break up the crab. Mold mixture into four, 4" ring molds. Tip: Balfour uses a donut cutter with the center hole cutter removed. Sauté over medium-high heat with butter.  Approximately three minutes per side.

 

Line the top of each crab cake with avocado and serve with your favorite hollandaise sauce. Garnish with micro cilantro salad and red chili oil.

Sommeliers Blind-Taste Texas Wines for Top Picks

 

Earlier this year a group of Texas sommeliers gathered to blind-taste more than 100 Texas wines and selected their favorites that best represent the Lone Star State.

 

"This tasting showed the strength of the Texas wine industry and how well Mediterranean varieties are doing," said Drew Hendricks, director of beverage education and wine for the Houston-based Pappas Restaurant Group and one of the sommelier tasters.

One bottle of wine has four glasses in it, but did you also know....

 

It takes about 2.4 pounds of grapes to produce one bottle of wine. That's 600-800 grapes.

 

One acre of land produces 5 tons of grapes, or 3,985 bottles of wine. In other words, if you drank a bottle of wine a day, it would take 11 years to consume the output of one acre of wine.
