Hawaiian Coconut Cake |
Ingredients
1 (18.25 ounce) package yellow cake mix 3 (3.4 ounce) packages instant vanilla pudding mix 4 cups cold milk 1.5 teaspoons coconut extract 1 (8 ounce) package cream cheese, softened 1 (20 ounce) can crushed pineapple, well drained 2 cups heavy cream, whipped and sweetened 2 cups flaked coconut, toasted
Directions
Mix cake batter according to package directions. Pour into two greased 13-in. x 9-in. x 2-in. baking pans. Bake at 350 degrees F for 15 minutes or until the cakes test done. Cool completely. In a large mixing bowl, combine pudding mixes, milk and coconut extract; beat for 2 minutes. Add the cream cheese and beat well. Stir in pineapple. Spread over the cooled cakes. Top with whipped cream; sprinkle with coconut. Chill for at least 2 hours. |

How to Get the Best Bang for Your Travel Buck

It's decided! You are going on a vacation. Not a visit to relatives - a vacation. But what? Where? When? How much? It's time to start planning.
The "when" may have been decided for you if your job or a school schedule determines your time off. It's likely that the "how much" (your budget) is also somewhat predetermined. Any other constraints? Health? Likes? Dislikes? Gather them all up and contact your travel agent. Lay it all out and let your agent help you put it together - Your dream vacation, the trip of a lifetime, or a long weekend to relax and re-group.
How can you best help your travel agent to help you? 1. Start early. Six to nine months ahead of time is usually best. Some trips need longer - a year or more - due to high demand. Your agent can usually book a trip with as little as a week's notice, but you will probably sacrifice some choices and value. 2. Be specific about things that are important to you. Don't wait until the air is booked to say that you won't fly a certain airline. If hot weather or foreign language is not acceptable, say so up front. 3. Don't add unnecessary restrictions. If you have two weeks vacation from work, but only want to travel for half the time, say so, but letting your agent know that you want to take a 7-night trip between June 1 and June 15 will help get the most for your money. Arbitrarily picking June 3-10 as your travel dates lessens your chances of a good deal.
Do you like to do your own planning? That works too! You'll be amazed at how much assistance your travel agent can give you when you come to him with your proposed itinerary, air quote, tour choices, even hotel names.
