Greetings!

December is the time of year when we acknowledge staff members that had outstanding performance during the year.  In this issue we would like to thank and recognize all of our staff, and share with you our award winning members.

Heat Pumps and the Defrost Cycle

When the temperature starts to drop and you switch to the Heat mode, your A/C Unit does some things that often causes alarm to the homeowner. 

The most common concern is,"My outdoor (condenser) unit is smoking.  While it may appear to be smoke this is actually steam and this is a normal part of the defrost cycle.  This cycle is necessary for the unit to melt any ice that forms in the outdoor unit. 

Recipe of the Month

Roast TurkeyLast month we asked how you used your leftover Thanksgiving Turkey.  We had many great submissions like Tuscan Turkey Soup, Turkey and Sweet Potato Croquettes, Turkey and Asian Noodles with Peanut Sauce, Turkey Curry Crepes, and the recipe chosen in a random drawing came from Iris Miller in Crystal River.

Turkey Quesadillas

Iris said they were quite simple; like making grilled cheese sandwiches.  For each Quesadilla you will need two tortillas.  You butter one side of each tortilla and place one, butter side down, in a pan on medium heat.  Top it with shredded turkey and shredded Swiss cheese.  Put the other tortilla on top , butter side up.  When the first side is golden flip and brown the other side.  Cut in quarters and serve with sour cream, scallions, and leftover cranberry sauce or chutney.
