Get BOLD This Spring!

 

Have you heard the good news about beef and heart health? If not, here's your chance to spring into action with some BOLD news. New research from The Penn State University shows that, when eaten as part of a heart-healthy diet, lean beef can help lower LDL "bad" cholesterol.

 

The study, called Beef in an Optimal Lean Diet (BOLD), proves that nutrient-rich lean beef, in addition to being satisfying and downright delicious, can be part of the solution to building a heart-healthy diet. What's more-lean beef is the perfect partner to the season's freshest fruits and vegetables as well as whole grains and dairy.

 

As you're looking for seasonal spring recipes, why not try Sirloin with Sugar Snap Pea and Pasta Salad or Beef, Mango and Barley Salad? These recipes, from The Healthy Beef Cookbook, were included in the heart-healthy BOLD study. Proof that you can have your steak and eat it too!

 

You can even try your hand at making your favorite heart-healthy recipe even more delicious by trying a lean cut of beef like Top Sirloin, Tenderloin or T-Bone.

Beef's Favorite Ingredient 
of the Month... Garlic!


It's almost garlic season! As spring arrives, we start to see fresh bulbs of pungent garlic at our stores and local farmer's markets. What perfect timing as we begin to think about dusting off the grill and throwing some juicy steak on the grates.  

 

 

Garlic can be used in so many different ways with beef. First let's tackle rubs. Rubs are simply seasoning blends applied to the surface of roasts, steaks and burgers. These quick mixtures add lots of flavor, but do not tenderize. Rubs can be applied just before cooking or up to 2 hours in advance. Minced garlic joins spices for powerful flavor combinations in recipes like Tender Pepper-Rubbed Strip Steaks with Grilled Vegetables and Beef Steak Al Forno.  

 

 

Garlic can also be used in marinades. There are cuts of beef like Flank steak that can really benefit from a tenderizing marinade. The keys are time and ingredients: 6 to 24 hours and acidic ingredients (such as lemon or lime juice, vinegar and wine). Flavorful Flank steak takes a dip in a garlic-infused marinade to create dishes like Balsamic Marinated Flank Steak and Chipotle-Marinated Beef Flank Steak. Just remember to marinate in the refrigerator in a food-safe plastic bag or nonreactive container like glass or plastic. Before cooking, remove beef from the marinade and pat dry with a paper towel to promote even browning and prevent steaming.

As the weather warms up and spring approaches, we're beginning to think about lighter dishes made with fresh ingredients. The grill is the perfect tool to get you to those light, fresh recipes. Even if the weather isn't warm enough in your neck of the woods, an indoor grill pan will do the trick!

 

Let's start with Beef Top Loin Steaks with Grilled Balsamic Vegetables, a basic recipe that incorporates onion, squash and zucchini. Lean, delicious Top Loin steaks (you may know them as Strip steaks) sizzle alongside the freshest vegetables for an entire meal on the grill.

 

Nothing makes us think about warm weather like island-inspired Caribbean Flank Steak with Coconut Rice. The addition of lime juice, cilantro and coconut make this recipe a wonderfully light experience. Serve with fresh pineapple or mango for some tropical sweetness.

 

And finally, a Southwest Steak and Many Layered Salad will awaken your senses with crunchy lettuce, creamy avocados, tangy tomatoes, the spice of chipotle pepper and the succulence of Flank steak. The stars of the salad, Flank steak and corn, are grilled for a unique flavor only obtained from the easy, direct heat cooking method.
