It's kind of like a cross between rice and couscous, but with a "meatier" texture. Ever wonder what's in tabbouleh? Yup, you guessed it, bulgur. It's high in fiber, protein, potassium, iron and B3 plus manganese. It can be eaten as a side dish, stuffing or used in baked goods. It's easy to cook too!
It's Easy... 1cup of boiling broth, water or juice (pineapple or apple) Then add 1 cup of bulgur. (Add more liquid if needed) Turn off and let sit 30 mins. until absorbed. Saute up some veggies, fruits or toast nuts and toss with bulgur. Toss with egg whites and veggies and make a wrap. Or make your own tabbouleh. |
