Bright and Hearty Salad |

Yields 7 servings
Tip Great to share at picnics, weekend gatherings, barbecues, and holiday dinners. Throw in some grilled chicken and would make a perfect lunch. This salad is always a crowd favorite and oh, so healthy!
1 pound asparagus, trimmed to 1 inch pieces 8 fresh mushrooms 1 large avocado, sliced into bite size pieces 1 medium zucchini, diced 1 large tomato, diced 1 medium purple onion, sliced 2 tablespoons lemon juice 2 tablespoons extra virgin olive oil 1 tablespoon balsamic vinegar 1 teaspoon Dijon mustard 1 garlic clove, minced 1 teaspoon fresh basil, or ½ teaspoon dried basil ½ teaspoon dried thyme ¼ sea salt ¼ teaspoon freshly ground pepper
Place asparagus and 2 tablespoons water in microwave-safe dish. Cover and microwave on high for 3 - 6 minutes or until crisp-tender, stirring once; drain and cool.
In a large bowl, combine asparagus, mushrooms, avocado, zucchini, tomato and onion; toss gently. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over salad and toss gently to coat. Cover and refrigerate until serving.

Greetings!
We've got some enormous changes that I'm so excited to share with you! First, as many of you know who train when the studio is full, we've outgrown our space. We've been so successful helping Hood County-ites trim down that we've gotten bigger. What a cool dichotomy! :-)
Don't worry -- we're not moving far! We've signed a lease on a new studio that will double our workout space. It is in Madison Park, next to Madison Grill, still on Acton Highway. The office will be in a loft and the entire bottom floor will accomodate training sessions. The increased space will allow us to add new programming, such as small group Gravity training, Pilates, corrective exercise, an early morning come-and-go membership with a new workout challenge daily, and more. But best of all, the new space will allow us to serve our existing clientele even better! We'll have more space for functional movements, agility moves, cardio, and more. Even though each of our professional trainers could deliver hundreds of high-quality, biomechanically appropriate workouts in a closet, our new space will present opportunities for more diverse movements, equipment, and flat out more fun!! The move will take place in mid-May.
We've also outgrown our name. When I opened the studio in December 2006 under the name Shelby Murphy Training and Fitness, I had a roster of long-term, loyal clients, a good reputation in Granbury, and no idea what the studio would grow into. I figured there was the fall-back possibility that the business would be just me, training my clients, making enough to pay the rent, keep the lights on, and maybe take a little bit home every now and then.
So, not knowing what else to call it, I went with Shelby Murphy Training & Fitness. Two weeks after the doors opened however, trainer Jean Opheim joined me. We've added to our team -- and subtracted as lives and necessity demanded --to create the great energy, determination, and expertise we have today with Louis, Scott, Mark, and me. Because our team will continue to grow, and we will continue to rely on contributions from the whole team, our name needed to grow too.
When we move, we will become Empower Personal Fitness Studio. We chose that name because it represents our fundamental mission -- to empower our clients to live active, healthy, happy lives. Most of our clients take what they learn in the studio and apply it to the hours they are not with us. They eat better, they walk or run more, they breathe deeper, they move their bodies, whether gardening or grocery shopping, in a safe, effective manner, and they have the confidence to tackle new challenges and adventures -- physical or not. That is what we mean by "Empowering your to live life on purpose." We're honored to soon have a name that reflects that noble mission.

Years in Granbury area: I was born and raised in Godley, and still live there today.
How long have you been training with Shelby Murphy Training & Fitness? I have been training with Shelby Murphy Training & Fitness since February 2008.
Who is your primary trainer? Mark, and he ROCKS!!!!
Why did you decide to begin training?
In June of 2003, I went into the doctor for my yearly check up, my cholesterol was extremely HIGH, and my weight was at 148lbs which is heavy for my 5' 4" frame. Growing up I had always been very active, playing basketball, running track, and cheerleading so I never had to worry about my weight. Now that I was out of school; I had developed bad habits over the years! I was eating out all the time, and drinking too many of my calories. I decided when I left the doctor that I was going to get the weight off! So I then began to run, which has now turned into my #1 passion!!! I started weight training 2 years later at a gym in Ft. Worth. I was hooked! I have had a personal trainer ever since.
What are your goals?
To maintain my healthy and active lifestyle throughout the rest of my life. I also hope to show my family and friends how to live healthy.
What physical differences have you noticed since exercise became a regular part of your life?
When I was just running, my body had no muscle tone, a "Runner's Body", as many call it. Since starting personal training, I have toned up and gained muscle all over my body. I also have more energy to tackle the day to day duties of being a mom!
What emotional differences have you noticed since you began putting your health as a priority? I now can handle stress in a more positive way, and just feel GREAT when I get up in the morning. Wake up with a positive attitude and feel like you can conquer the world! How are you living your life differently now that you are in better shape? My eating habits are totally opposite then what they were 6 years ago. I make a point to do cardio at least 5 days a week. Exercise is a part of my day to day routine.What do you have the confidence to do now, that you never would have done before? I love to run 5K's!!!! Who have you inspired to make a positive change in their life since you've made a positive change in yours? I have several friends who have begun training, my cousin Marissa was a spotlight client a few months back. What are you the most proud of? That I have continued to live a healthy, active lifestyle for nearly 6 years now! My passion for running led me to start a charitable Fun Run, to benefit a family friend who is now dealing with paralysis, due to a injury sustained in a car wreck.
Shelby's comments:
Anyone who knows Fara is inspired by her. She is fully committed to her health and her lean body is a reflection of that committed lifestyle. Although she's quiet, she always has a happiness about her that we all appreciate. We have yet to find a workout that Fara can't master! |

 Meritt and Tara McKittrick
Fara was instrumental in creating the Godley Fun Run/Walk (Saturday, May 9th -- sign up at the studio!) Here's a little background on why the run was founded.
The run will benefit the StandUp Foundation, which was created in part because of Meritt McKittrick. In April of 2006, Meritt, then age 4, and her mother were driving home when a drunk driver hit them in a head on collision at 60 miles per hour. Meritt's spinal cord was injured and doctors did not give her much hope to ever walk again. After being discharged from the hospital, her physical therapy sessions primarily focused on her upper body, with therapists telling her parents that there was not much more that they could do for her until she could move her legs.
In 2008, Meritt and her parents heard about Project Walk and went to California to begin treatment. Project Walk is the most experienced exercise-based spinal cord injury recovery center in the world. However, the travel and cost associated with the trips to California began to overwhelm Meritt's family. Meritt soon started working with Pressing on, in San Antonio, which has similar treatment to Project Walk, but is more manageable than traveling to California. Being closer to home has allowed Meritt to stay in school much more.
A spinal cord injury is devastating but when it happens to a child like Meritt, the already catastrophic injury becomes even more tragic. Children do not understand the enormity of their injury or the impact it will have on the rest of their life. The true tragedy occurs when the children and their families are given no hope, encouragement, or chance for recovery or when they cannot afford the treatment in centers like Project Walk or pressing On. Meritt's family has spent over $15,000 in treatment alone in less than two years at these two facilities.
Please support this good cause by participating in the Fun Run/Walk. This will help this little girl get the help she needs, to try and walk again.
Meritt's parents recently asked Shelby and Louis to work with Meritt, to further her recovery as well. We have started training her twice a week to help support the work that has been done by Project Walk and Pressing On. We are consistently impressed and touched by this wonderful girl that wants what most people do without thought, to stand and walk. She works very hard when she is at the studio and her attitude is as golden as her effort.
Please support this good cause by participating in the Fun Run/Walk. This will help this little girl get the help she needs to eventually walk again!
