Creative Food Ideas...
A Summer Salad:
Tomato Feta Pasta Salad
Feeds 50 people
Ingredients
- 4 pound fusilli (spirals) pasta
- Kosher salt
- Good olive oil
- 8 pound ripe tomatoes, medium-diced
- 6 cup good black olives, such as kalamata, pitted and diced
- 8 pound good feta cheese, medium-diced
- 48 sun-dried tomatoes in oil, drained and chopped
For the dressing:
- 40 sun-dried tomatoes in oil, drained
- 16 tablespoons red wine vinegar
- 48 tablespoons good olive oil
- 8 garlic clove, diced
- 8 teaspoon capers, drained
- 8 teaspoon kosher salt
- 6 teaspoon freshly ground black pepper
- 8 cup freshly grated Parmesan
- 8 cup packed flat-leaf parsley, chopped
Directions:
Cook the pasta in a large pot of boiling salted water with a splash of oil to keep it from sticking together. Boil for 12 minutes, or according to the directions on the package. Drain well and allow to cool. Place the pasta in a bowl and add the tomatoes, olives, feta and chopped sun-dried tomatoes.
For the dressing, combine the sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt and pepper in a food processor until almost smooth.
Pour the dressing over the pasta, sprinkle with the Parmesan and parsley, and toss well.

*Drivers Needed
TCAA's Home Delivered Meals
program (HDM) is seeking drivers to deliver lunch to our homebound seniors and disabled residents. Delivery starts at 9:30 AM, Monday-Friday. A valid driver's license and background check is required. If you are interested, please contact Kathy Flores, at 480-858-6511, for more information.
*I-HELP Opportunities
I-HELP is seeking individuals willing to drive the "Shower Power," mobile shower truck and trailer from the storage yard to the host site. If interested please email Sam Sumner.

Michael (Mike) Robinson, where is he now...
Michael (Mike) Robinson started living on the streets back in 2006 before coming to the Interfaith Homeless Emergency Lodging Program (I-HELP) in 2007. Mike heard about I-HELP from a I-HELP monitor Dave Talley. Mike had been a forklift driver over the years maintaining a financially stable life until the summer of 2006 when his wife Nancy passed away. Mike began volunteering at TCAA's Food Pantry in August of 2009, and became a I-HELP volunteer in January 2010. Home At Last awarded Mike an apartment and he signed the lease on April 19, 2010. Mike is still volunteering his time with the food pantry twice a week and also volunteers with Home At Last gathering and delivering furniture.
When asked what I-HELP meant to him Mike stated, "the encouragement I received from Sam, Jessica, Lindsay, and Monica from Tempe Community Action Agency made a lasting impact which brought stability to my life. Volunteering for the Food Bank and I-HELP encouraged me to rediscover God and my inner strengths. The program was important because it gave me a place to volunteer, a place to eat and a place to sleep."
Now that Mike is living in a stable environment he is able to receive some much needed medical attention. Once his illness goes into remission his goal is to take computer classes so he can return to working as a forklift operator.
