Greetings!
The past several days have been
intense for anyone following the horrific devastation caused by the earthquake in
the area of Port-Au-Prince, Haiti.
It's incredibly difficult to watch the suffering of others. We
often experience a range of emotions such as anxiety, helplessness,
sadness and guilt. During times of distress we are especially likely
to hold our breath. The next time you are watching, reading about, or
listening to the current events before us I bet you'll catch yourself
either holding your breath or taking very short, shallow breaths. It
is vitally important that you breathe well and deeply. Breathing
affects every part of the body by oxygenating organs, cells and tissues
so they may regenerate and function properly.
Breathing:

Fuels energy production
·
Improves focus and concentration
·
Eliminates toxins
·
Strengthens the immune system
·
Improves bowel function
·
Reduces stress, tension and anxiety
·
Increases feelings of calmness and relaxation
·
Can lower blood pressure
·
Increases metabolism, aiding in digestion and weight loss
Try this stress-relieving breath technique advocated by Dr. Andrew Weil:
The 4-7-8 (or Relaxing Breath) Exercise:
This exercise is utterly simple, takes almost no time, requires no
equipment and can be done anywhere. Although you can do the exercise in any
position, try sitting up with your back straight while learning the exercise.
Exhale completely through your mouth, making a whoosh sound.
1. Close your mouth and inhale quietly through your nose to a mental
count of four.
2. Hold your breath for a count of seven.
3. Exhale completely through your mouth, making a whoosh sound to a
count of eight.
This is one breath. Now inhale again and repeat the cycle three
more times for a total of four breaths.
Once you develop this technique by practicing it every day, it will
be a very useful tool that you will always have with you. Use it whenever
anything upsetting happens - before you react. Use it whenever you are aware of
internal tension. Use it to help you fall asleep. This exercise cannot be recommended
too highly. Everyone can benefit from it.

New Year - New You!
A lot of people begin the New Year by
making resolutions. We've all been there. We take a vow to lose weight,
exercise more or spend more time with our family. We start the year with great
intentions, but then we quickly relapse into old habits. Why is it so hard to
stick to those New Year's resolutions?
Here are some ways you can make your
intentions a reality this year:
1. Write down your intentions and keep them
in a visible place, like taped to your bedroom mirror or the dashboard of your
car.
2.
Get to the source of whatever is keeping you in a rut. Are you in a
stressful relationship that causes you to eat a pint of Ben & Jerry's every
night? Are you stressed at work and feel too tired to exercise after work? If you don't tackle the root of the behavior,
it will be much harder to accomplish your goal.
3. Be clear about what your life would look
like once you achieve your goal. If you resolve to go to the gym more, how will
this benefit you? Get connected to the result of your action, and you will be
more likely to stick with your plan.
4. Share your resolutions with friends and
family. Hold each other accountable for achieving your goals. If you want to go
to the gym more, have a friend call you two or three times a week to check on
you or invite them to join you.
5. Reward yourself with every little
accomplishment. If your intention is to lose weight and you lose 1 pound a
week, pamper yourself with a massage.
Big changes do not require big leaps.
Permanent change is more likely to happen gradually than through one big restrictive
plan. Allow yourself to climb the ladder one rung at a time.

Food Focus: Sea Vegetables
In traditional Chinese healing, sea
vegetables correspond to the winter season and to the kidneys, adrenal glands,
bladder and reproductive organs. The strengthening, balancing and cleansing
properties of sea vegetables are known to help these organs as well as the
hair, skin and nails. Sea vegetables (or seaweeds) provide a variety of
minerals and vitamins, including calcium, iron and iodine, and can help balance
hormone and thyroid levels in the body. Eating too many processed foods or
foods grown in mineral-depleted soil can result in a lack of minerals in the
body, leading to cravings for salty or sugary foods. Adding sea vegetables to
your diet can help balance your energy levels and alleviate cravings.

Recipe of the Month: Mighty Miso Soup
 Instead of buying boxed packets of miso
soup with entirely too much sodium, make it fresh! Hit your local health food store and pick up a sea
vegetable variety and miso (refrigerator section), add a few other ingredients - and voila! Home-made miso soup!
Prep Time: 5-10 minutes
Cooking Time: 10-15 minutes
Yields: 4-5 servings
Ingredients:
4-5 cups spring water
1-2 inch strip of wakame, rinsed and
soaked 5 minutes in 1 cup ofwater until softened
1-2 cups thinly sliced vegetables of
your choice (see notes)
2-3 teaspoons barley miso
2 scallions, finely chopped
Directions:
1. Chop soaked wakame.
2. Discard soaking water or use on
houseplants for a boost of minerals.
3. Place water and wakame in a soup pot
and bring to a boil.
4. Add root vegetables first and simmer
gently for 5 minutes or until tender.
5. Add leafy vegetables and simmer for
2-3 minutes.
6. Remove about 1/2 cup of liquid from
pot and dissolve miso into it. Return it to the pot.
7. Reduce heat to very low; do not boil
or simmer miso broth.
8. Allow soup to cook 2-3 minutes.
9. Garnish with scallions and serve.
Note:
Any combination of vegetables can be
used in miso soup. Here are some classic combinations:
onion-daikon: cleansing
onion-carrot-shiitake mushroom-kale:
mildly sweet
onion-winter squash-cabbage: great in
wintertime
leek-corn-broccoli: great in
summertime
Variations:
Add cooked grains at the start of
making the soup. They will become nice and soft.
Add a tablespoon of uncooked quinoa or
millet at the beginning and let it cook with vegetables for 20 minutes.
Add cubed tofu toward the end.
Add bean sprouts toward the end.
Season with 1/2 teaspoon ginger juice
for an interesting twist.
If using dry shiitake mushrooms, let
them soak for 20 minutes, slice and add at the beginning.

About Me 
After more than 16 years in the financial
services industry I decided to follow my passion to help others more
directly. A vegetarian since the
age of 14 (and a Southern vegetarian at that!), I've been a proponent of
conscious living for some time.
Delving more deeply into nutrition seemed natural and an ideal way to
help others, especially given the current health crisis that is creating so
much inconvenience and pain. As
the late astronomer and educator Carl Sagan said, "we are made of star
stuff." Literally, we are
organic beings made from the same elements that make up the universe and to
regenerate we need organic materials. We need to eat foods our bodies
recognize. We are doing ourselves
a great disservice by consuming all of the artificial, chemicalized, synthetic
junk-food made available to us by desensitized, profit-hungry
corporations. There is a time and
place for packaged food and pharmaceutical drugs, but they should be last
resorts - not how we live on a daily basis. Our bodies can heal themselves when they're given adequate
amounts of organic materials -
vitamins, minerals, and nutrients.
These essential elements are best assimilated through whole foods rather
than synthetic versions. I look
forward to sharing ways to live healthier lives through these newsletters and my
counseling services.
I received my certification to
practice Holistic Health Counseling at the Institute for Integrative Nutrition
- the only nutrition school integrating all dietary theories with an emphasis on the whole person,
designed to help individuals determine what works best for them. I completed the Food As Medicine course
through The Center For Mind/Body Medicine, and am enrolled in the Natural Kitchen Cooking School to become a Natural Food Chef (May 2010). I am also a certified personal trainer
and incorporate exercise into my counseling services. Come join our running group in Myers Park every Mon/Wed/Fri
