Welcome to this edition of our Columbus County Community Farmers Market E-newsletter.

Thank you for your patronage during 2009!  We wish you and yours a very Merry Christmas and a happy, healthy and prosperous New Year!
What's Available This Week
The Columbus County Farmers Market is currently closed for the 2009 season.  We will re-open in Spring 2010.  The official opening day festivities are always scheduled for the second Saturday in May.

Recipe of the Week
Classic Pecan Pie
Pecan PieCelebrate the holidays with this delicious pecan pie recipe from allrecipes.com.

Time
Prep:  5 min.; Cook:  1 hour 10 min.
 
Yield
8 servings 
 
Ingredients
  • 1 cup Karo® Light Corn Syrup*
  • 3 eggs
  • 1 cup sugar
  • 2 tablespoons butter, melted
  • 1 teaspoon Spice Islands® Pure Vanilla Extract
  • 1 1/2 cups pecans
  • 1 (9 inch) unbaked deep dish pie crust

    Preparation
    Mix corn syrup, eggs, sugar, butter and vanilla using a spoon. Stir in pecans.  Pour into pie crust.  Bake at 350 degrees F on center rack of oven for 60 to 70 minutes.
    Cool for 2 hours before serving.
     
    Pie is done when center reaches 200 degrees F. Tap center surface of pie lightly - it should spring back when done. For easy clean up, spray pie pan with cooking spray. If pie crust is over browning, cover edges with foil.
     
    *To reduce calories substitute Karo® Lite Syrup.

    Brenda SuttonThe Columbus County Community Farmers Market Annual Meeting will be held on Friday, February 26, 2010.  More details will be announced in early 2010. 
     
    President Irvin W. Brown has confirmed that the guest speaker will be "The Produce Lady," Brenda Sutton, who teaches farmers and consumers the wonders of locally grown fruits and vegetables.  Not only does she share their nutritional value, she also demonstrates how to prepare them as tasty meals and snacks or preserve them to use throughout the year.  For more information, visit "The Produce Lady" online.

    The Columbus County Farmers Community Market is located at 132 Government Complex Road in Whiteville, North Carolina near the Department of Social Services.  Normal hours of operation are Tuesdays, Thursdays, and Saturdays, from 7:00 AM until 12:00 Noon.  The Market features farmer-grown, farmer-sold products.  Member's farms are visited periodically to assure that all items sold are locally grown by the seller and are of the highest quality.
