Southeastern Community College Offers FARMS Courses
Southeastern Community College now enrolling Continuing Education classes through Project Skill-UP Columbus FARMS - Fostering Agriculture Resources for Money and Success! Courses this fall include plant micropropagation and REAL (Rural Entrepreneurship Through Action Learning) training. The Columbus County Farmers Market is open on Tuesday, Thursday, and Saturday from 7:00 AM until 12:00 Noon with a variety of locally grown, farm fresh products.
There should be a good variety of locally grown, farm fresh fruits and vegetables including turnips, cabbage, mustard greens, collards, okra, peas, butternut squash, squash, zucchini, sweet onions, potatoes, peppers, tomatoes, eggs, pecans, sweet potatoes, Japanese persimmons, pumpkins, gourd crafts, handcrafted jewelry, jams, jellies, pickles, honey, honey soaps, baked goods, and more! Fresh Pumpkin Soup
It's the time of year when pumpkins are plentiful and the cool fall temperatures make soup a great meal. Here is a delicious and nutritious recipe for fresh pumpkin soup from Taste of Home magazine. Come by the Farmers Market this week for some pumpkins for decoration and diet.
9 servings (about 2 quarts)
Ingredients
8 cups chopped fresh pumpkin (about 3 pounds)
4 cups chicken broth
3 small tart apples, peeled and chopped
1 medium onion, chopped
2 tablespoons lemon juice
2 teaspoons minced fresh gingerroot
2 garlic cloves, minced
1/2 teaspoon salt
TOASTED PUMPKIN SEEDS:
1/2 cup fresh pumpkin seeds
1 teaspoon canola oil
1/8 teaspoon salt
Preparation
In a 5-qt. slow cooker, combine the first eight ingredients. Cover and cook on low for 8-10 hours or until pumpkin and apples are tender.
Meanwhile, toss pumpkin seeds with oil and salt. Spread onto an ungreased 15-in. x 10-in. x 1-in. baking pan. Bake at 250° for 45-50 minutes or until golden brown. Set aside.
Cool soup slightly; process in batches in a blender. Transfer to a large saucepan; heat through. Garnish with toasted pumpkin seeds.

One serving (1 cup) equals 102 calories, 2 g fat (trace saturated fat), 0 cholesterol, 567 mg sodium, 22 g carbohydrate, 3 g fiber, 3 g protein. Diabetic Exchanges: 1 starch, 1/2 fruit |

 Get ready for Christmas gift giving at our third annual "Christmas from the Heart" Craft Show & Sale. All items, including crafts, baked goods, jams, jellies, pickles, relishes, etc. must be handcrafted or homemade by local residents. Vendor spaces are $5 per space. Space reservations are required and available on a first-come, first-served basis. A vendor/crafter registration form is available online or by calling Carol Shuman at (910) 642-3789.

The Columbus County Farmers Community Market is located at 132 Government Complex Road in Whiteville, North Carolina near the Department of Social Services. Normal hours of operation are Tuesdays, Thursdays, and Saturdays, from 7:00 AM until 12:00 Noon. The Market features farmer-grown, farmer-sold products. Member's farms are visited periodically to assure that all items sold are locally grown by the seller and are of the highest quality.
