Welcome to this edition of our Columbus County Community Farmers Market E-newsletter.
 Happy 4th of July! Join us this Saturday, July 4, as we celebrate America's 233rd Birthday!
In addition of lots of locally grown, farm fresh fruits and vegetables, we will serve free homemade ice cream, provide free recipes & nutritional information.

 The Columbus County Farmers Market is open on Tuesday, Thursday, and Saturday from 7:00 AM until 12:00 Noon with a large variety of farm fresh products.
There should be a good variety of locally grown, farm fresh fruits and vegetables including blackberries, blueberries, cantaloupes, watermelons, beets, broccoli, butterbeans, cabbage, carrots, cucumbers, eggplant, scallions, squash, zucchini, sweet onions, mustard greens, turnips, kale, radishes, rutabagas, kale, new potatoes, peppers, sweet corn, tomatoes, eggs, pecans, herbs, gourd crafts, handcrafted jewelry, jams, jellies, pickles, honey, honey soaps, baked goods and more!

Seven-Vegetable Salad
If you are planning a cook-out or picnic with family and friends this Fourth of July weekend, be sure to include this light and tasty summer salad. The recipe from Taste of Home magazine features many of the locally grown, fresh vegetables available at the Columbus County Community Farmers Market.
Time
Prep: 30 min.
Yield
12 servings
Ingredients
1 cup cut fresh green beans
1 cup fresh sugar snap peas
1 cup yellow summer squash, sliced
1 cup zucchini, sliced
1/2 cup onion, julienned
2 small tomatoes, seeded and chopped
1 cup carrots, coarsely grated
2/3 cup reduced-fat Italian salad dressing
4 teaspoons minced chives
2 teaspoons dried basil
Directions
In a saucepan, bring 2 in. of water to a boil. Add beans, peas, yellow squash, zucchini and onion. Reduce heat; cover and simmer for 2-3 minutes or until vegetables are crisp-tender. Drain; rinse with cold water and pat dry.
Place vegetables in a bowl; add the remaining ingredients. Gently stir to coat. Refrigerate until serving. Nutritional Information

The Columbus County Farmers Community Market is located at 132 Government Complex Road in Whiteville, North Carolina near the Department of Social Services. Normal hours of operation are Tuesdays, Thursdays, and Saturdays, from 7:00 AM until 12:00 Noon. The Market features farmer-grown, farmer-sold products. Member's farms are visited periodically to assure that all items sold are locally grown by the seller and are of the highest quality.
