Welcome to this edition of our Columbus County Community Farmers Market E-newsletter.
 
Tote BagWe invite you to stop by our new Information Booth near the main entrance of the Farmers Market.  Volunteers are helping us staff the booth which has community information, health brochures, recipes, etc.  You may also purchase Farmers Market merchandise including environmentally-friendly reusable shopping bags, t-shirts, window decals, and key rings.

In addition, the Information Booth is where you swipe your EBT, Visa or MasterCard credit or debit cards and receive you tokens for shopping at the Market!

What's Available This Week
Doris VendorIt is still fairly early in the 2009 growing season.  Although the Farmers Market is open on Tuesday, Thursday from 7:00 AM until 12:00 Noon, Saturday will remain our largest Market day until local production increases.
  
There should be a good variety of locally grown, farm fresh fruits and vegetables including blueberries, strawberries, broccoli, garden peas, squash, onions, scallions, cucumbers, mustard greens, kale, new potatoes, pecans, herbs, gourd crafts, jams, jellies, honey, honey soaps, baked goods and more!

Recipe of the Week
Vegetable Slaw 
Vegetable SlawCombine fresh, locally grown cabbage, tomatoes, broccoli, cauliflower and onion from the Columbus County Community Farmers Market to create this delicious side dish from Healthy Cooking magazine.  It also makes a great light lunch when stuffed into a whole wheat pita.
Time
Prep: 30 min. + chill time
 
Yield
6 servings
 
Ingredients
3 cups shredded cabbage
5 plum tomatoes, seeded and chopped
1 cup fresh broccoli florets, cut into small pieces
1 cup cauliflowerets, cut into small pieces
1/2 cup chopped red onion
1/2 cup fat-free sour cream
1/4 cup reduced-fat mayonnaise
1 tablespoon cider vinegar
3/4 teaspoon salt
1/4 teaspoon pepper
 
Directions 
In a bowl, combine the cabbage, tomatoes, broccoli, cauliflower and onion. In a small bowl, combine the sour cream, mayonnaise, vinegar, salt and pepper. pour over cabbage mixture; toss to coat evenly. Cover and refrigerate until chilled.
 
Nutritional Information

One serving = 3/4 cup; Calories: 84; Fat: 5 g; Saturated Fat: 1 g; Cholesterol: 7 mg; Sodium: 402 mg; Carbohydrate: 10 g; Fiber: 3 g; Protein: 3 g; Diabetic Exchange: 2 vegetable, 1 fat.

Come to the Farmers Market on Saturday, June 6, for Berry Day.  Enjoy free samples of blueberries, strawberries, and other locally grown seasonal berries.  There will also be free homemade ice cream, recipes & nutritional information.
 
*All events are subject to change or cancellation without notice.Samples and give away items are available on a first-come, first-served basis while supplies last.

 
The Columbus County Farmers Community Market is located at 132 Government Complex Road in Whiteville, North Carolina near the Department of Social Services.  Normal hours of operation are Tuesdays, Thursdays, and Saturdays, from 7:00 AM until 12:00 Noon.  The Market features farmer-grown, farmer-sold products.  Member's farms are visited periodically to assure that all items sold are locally grown by the seller and are of the highest quality.
