Lots of new Vintages - just bottled!!
This past week at the winery, we bottled 4200 cases of all new vintages! Yes, 4200! 
We did not do this alone, however. Only with the incredible help from our friends and investors were we able to accomplish this task, and, in just two days. 

 

Do you remember the "I Love Lucy" show about the assembly line in the chocolate factory? We certainly tried to avoid that fiasco. But it can happen and sometimes did! - except with bottles of wine instead of chocolate. I think we all discovered muscles we never knew we had.
But oh..., the outcome. The wine is gorgeous indeed.

RECIPE 

 

Don't forget CA folks, our summer (September and October)

is just beginning.  The perfect time for seafood and crisp Sauvignon Blanc. 

 

Here's a great summer recipe to go with the Sauvignon Blanc!   


Chipotle Shrimp

Spicy Chipotle Grilled Shrimp



Ingredients  -serves 6

  • 2 cloves garlic, minced
  • 2 chipotle peppers in adobo sauce, chopped
  • 1-2  lemons, juiced
  • 1 tablespoon olive oil
  • 1 tablespoon paprika
  • 1 teaspoon chopped fresh cilantro (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon cayenne pepper
  • 2 pounds uncooked medium shrimp, peeled and deveined
  • wooden or metal skewers

Directions

  1. Mix together the garlic, salt, black pepper, red pepper flakes, cayenne pepper, chipotle peppers, lemon juice, olive oil, paprika, and cilantro in a bowl. Stir in the shrimp, and mix well to thoroughly coat. Marinate for 30 minutes or more in refrigerator.
  2. Preheat an outdoor grill to medium-high heat, lightly oil the grate.
  3. Remove the shrimp from the marinade, and discard excess marinade. Thread about 5 shrimp per skewer, and grill on the preheated grill until the shrimp turn pink and opaque in the center, about 2 minutes per side.

This wine tastes just as vibrant and fresh as the day it was bottled, partly because of the way in which it was made, but mostly because we use the stelvin closure, or rather, screw caps. Perhaps not as romantic as real corks, the stelvin closure is by far the best way to enclose a white wine that is intended to be drunk sooner than later, and not cellared. It ensures that the wine maintains its vibrancy and youthful characteristics. 

We just bottled our 2010 Sauvignon Blanc and are looking to move through the 2007. Some people think that white wine cannot age. But it most surely can, especially when the wine is protected with the stelvin closure. Our 2007 remains vibrant and crisp, youthful and full of luscious mineral and citrus tones.

Both the 2007 and the 2010 Sauvignon Blanc are made in the French Sancere style - lean and crisp, lots of mineral tones, good acidity, with hints of citrus: Mandarin and Blood oranges, Ruby Red Grapefruit.

This sale will go until the vintage is done. The 2010 Sauvignon Blanc will be for sale at the regular price of $13 a bottle, $156 a case.

Crush 2011 

 

 

 

Hello everyone,
What a busy and wonderful summer this has been. Our most exciting news is that our oldest son Ivan was married this past July. The wedding,  held in bucolic Bedford New Hampshire, was absolutely lovely. We now have a wonderful daughter-in-law, whom we already love like a daughter.

Ivan and Meghan took their honeymoon on the coast of Maine, staying in some picturesque inns - lots of bike riding, exploring, relaxing.

This year we're making our first ever Chardonnay!!
Summer is over and crush will soon be upon us.  We've been busy in the winery getting everything prepped for the arrival of our first grapes, which will be out first ever Chardonnay! We have long thought , why make a Chardonnay? Everybody makes Chardonnay! Why add yet another Chardonnay to the over -crowded market?!

 

We have had a serious change of heart, however. Mainly because we have been drinking some fabulous French Chardonnay lately - our favorite style of this varietal. So we decided: let's make French style Chardonnay. To accomplish this, one of the first things we bought was a large concrete "egg" - a perfect vessel for fermenting Chardonnay to bring out the more desired French style mineral characteristics. Here is a picture of our "egg":

A giant egg or a space capsule with suspenders on? We think it more resembles an egg. We've named our egg "Chicken Little."

 

To compliment the egg fermentation, we bought some Rousseau French oak barrels to do the rest of the fermentation in. We are anticipating the release of our Chardonnay sometime in the summer of 2012.

Chardonnay Name Challenge!!!
As most of you know, all our labels have musical paintings on them (by the wonderfully talented Mimi Stuart - www.mimiart.com) and they all have musically inspired (sometimes jazzy) names. Wherever possible, we try to use a little alliteration: Zydeco Zinfanel, Minuet in Merlot, Pizzicato Petite Sirah, Saxy Syrah, etc. 

So, what to name our Chardonnay? The obvious name that came to mind was Chanson Chardonnay - but it had already been taken by another winery. 

If you can come up with a musical name, preferably with alliteration, and yours is the one we choose, you will win a case of of our Chardonnay!!  Keep in mind, however, this name must not be in use by another winery. You'll have to do a little googling to make sure.

The challenge is on!! Good luck!

Dan Kanuk is a long time friend and colleague of Kevin's. He comes to us with over 20 years of experience in the wine business, most of it in the wine wholesale market side of the world. Dan will be the man out in the field all around the US, opening up new markets for us and maintaining the existing ones.
