RECIPE REDUX
This wonderful, versatile Zinfandel sauce is perfect for Easter and Passover meals. Created by Jeannie Graham, this recipe was so popular we thought it worthy of a repeat for the holidays.
Savory Chocolate-Zinfandel Sauce

Ingredients:
3 whole cloves
6 black peppercorns
1 2-inch stick cinnamon
1 teaspoon cumin seed
1/2 teaspoon cardamom
2 cups Zinfandel wine
2 tablespoons packed brown sugar
1 cup dried sour cherries (pitted)
2 ounce unsweetened chocolate, chopped
5 tablespoons butter
1/2 cup good-quality beef stock
Preparation:
Toast cloves, peppercorns, cinnamon, cumin seed and cardamom in a heavy saucepan
Stir about 3 minutes until all are hot and aroma is released.
Add Zinfandel and brown sugar
Simmer until reduced by half, about 20 minutes.
When Zinfandel is reduced, remove saucepan from heat and add cherries to soak while you're blending the remaining ingredients of chocolate, butter and beef stock
In a small saucepan, melt chocolate and butter. Wisk the beef stock into the chocolate and heat. Add the spiced Zinfandel reduction and keep warm until served.

 From the Winemakers R&B Cellars Goes Global
Western Europe, Hong Kong, and Mainland China!
These are exciting times for R&B Cellars. This spring we joined the select group of California wineries (a total of four) represented by California Group, an import agent to 20 Western European countries. We begin distribution in Denmark and look forward to expanding to all twenty Western European countries within the year.

Pizzicato Petite in Paris, Metronome Merlot in Milan, Zydeco Zin in Zurich, or quaff a little Serenade in Blanc on the Seine! Now, when you go to some of your favorite European haunts you'll be able to order your favorite R&B wines!
California wines are burgeoning in the China. In fact, the whole Pacific Rim is witnessing a huge increase in consumer awareness and the desire for better wine. R&B is on the forefront of this trend.
In Hong Kong we continue the fun with California Vintages. This project, involving 23 California wineries, all shareholders in California Vintages, began this past January with the opening of a wine bar on Wyndham Road in Hong Kong. This sleek and trendy bar, which includes a restaurant and wine education classes, has taken off like hot cakes. It is so overwhelmingly successful a second location will be opening in Hong Kong later this year, a full 6 months ahead of schedule!
Next stop, Mainland China. Our long-standing negotiations and discussions are finally starting to bear fruit in Mainland China, along with some other "irons in the fire" in other Pacific Rim countries. We will keep you apprised, as these "irons" become reality. Meanwhile, we continue to sell our wines to the US Embassy in Thailand, where our wines are served at official Embassy functions.
It's all very exciting and we are seeing the necessity of learning some important words in several languages.
