About the San Francisco Chronicle Wine Competition
In 1983,
45 wines from 15 wineries entered the first competition, then called
the Cloverdale Citrus Fair Wine Competition. Since 2000, when the San
Francisco Chronicle took over naming rights for the competition and
moved the judging to The City, it has grown by leaps and bounds.
In
2006 over 900 wineries in the U.S. entered over 3,300 wines, making it
the world's largest competition of American wines. This year, over
4,900 wines were tasted. R&B holds the honor and proud recognition
to stand out amongst the competition.

From the Winemakers
Kevin & Barbara are on the road for the next week or so, securing distribution of R&B Cellars in other states in the US. We have substituted the column with a wonderful interview by Nikitas Magel, which Kevin noted, really conveyed the R&B philosophy on wine.

Spotlight on R&B Cellars
Just as with their passion for music - referenced in the artwork of the vibrant blue labels on their wine bottles - love of wine comes across lyrically and resonantly in person with Kevin and Barbara Brown, the husband and wife team behind R&B Cellars. Sitting down with the couple in the living room of their spacious and charming Victorian house in San Francisco's bucolic suburb of Alameda, I spoke with them about R&B's portfolio of wines, their respective styles, and their relative position among California wines. I took keen interest in having Kevin share not only his winemaking experience, but also, given his prior background in wines sales, his perspective on the market as a whole and what he felt were the best approaches for the consumer to make the most out of an oftentimes confusing wine-buying experience.
"It's (Zinfandel) America's heritagegrape, it's something uniquely American - like
jazz - so it holds a spot near and dear to my heart... I would be
thrilled to see it become the next Pinot Noir or the next Merlot... seeing Americans enjoying something that's distinctly American -
like baseball. I don't think we've done a good enough job of educating people
about that."

Winemaker Kevin Brown selected the recipe below as a compliment to the new Fortissimo Port being released at the end of February. Kevin explains below why this recipe is a perfect pairing for his new wine.
"The density of the chocolate will match very well with the dark plum, cherry, tobacco and leather of the port. Fortissimo is just what it's name suggests, strong and bold, like a musical passage the demands your attention, this wine will accept nothing less than 100% of your taste buds!" -Kevin Brown

Chocolate Mousse Cake
with Cinnamon Cream
Ingredients:
Here is what you need for the cake:
1/3 cup of water
1/3 cup sugar
1 stick (1/2 cup) unsalted butter, cut into pieces
12 ounces semisweet or bittersweet chocolate (not unsweetened), chopped coarse
6 large eggs
1/3 cup strong brewed coffee
2 tablespoons dark rum (if desired) is optional
1/2 teaspoon cinnamon
For the cream:
1 cup well-chilled heavy cream
2 tablespoons sugar
1 teaspoon cinnamon Preparation:
1) Preheat oven to 325°F. Butter an 8-inch
round cake pan (about 2 inches deep) and line bottom with a round of parchment
paper or foil.
2) In medium saucepan bring water and sugar to a simmer over moderate heat,
stirring occasionally. Add butter and simmer, stirring occasionally, until
melted. Remove pan from heat and add chocolate, swirling pan to submerge chocolate
in hot syrup. Let chocolate stand in syrup 3 minutes and whisk until smooth.
3) In a large bowl whisk together eggs, coffee, rum, and cinnamon. Add chocolate
mixture, whisking until well combined, and pour into cake pan.
4) Put cake in pan in larger pan and add enough water to reach halfway up
side of cake pan. Bake cake in middle of oven 45 minutes, or until slightly
firm to the touch. Cool cake completely in pan on rack.
5) Cake may be kept in pan, wrapped in plastic wrap, and chilled 1 week or
frozen 1 month. Thaw cake completely before proceeding.
6) Run a thin knife around pan to loosen cake and put pan on hot stove burner
for 3 to 4 seconds. Invert cake onto a plate and remove parchment or foil.
Bring cake to room temperature.
To make the cream:
1) In a bowl with an electric mixer or whisk beat cream with sugar and cinnamon
until it just holds stiff peaks. Over time, experiment with say a pinch of
ground cardamom or ginger in the mix.
Just before serving, spread cream over top of cake or spoon onto plates alongside
individual pieces.
