Chicken
Breasts With Peaches in a Swingsville Zinfandel Reduction
Ingredients 1/2 cup apple cider 2 1/4 teaspoons cider vinegar 1 1/2 teaspoons minced shallots 1-2 teaspoons minced garlic 2-3 tablespoons olive oil 4 (1/4 lb) boneless skinless chicken breast 3/4 cup sliced peeled peaches (1 large or 2 small peaches) 1 3/4 cup Swingsville Zinfandel wine
Preparation: Combine the cider, vinegar and shallots in a zip-close plastic bag. Add
the chicken, squeeze air out and seal the bag, turn to coat the
chicken. Refrigerate, turning bag occasionally, at least 30 minutes.
Remove the chicken breasts from the bag. Preheat a saute pan with the olive oil, add garlic and cook about 1 minute. Saute each chicken breast about 2-3 minutes on each side until done.
Set chicken breasts aside on a platter in a warm oven.
Add
the wine to the pan and reduce heat. Simmer until the amount is reduced
by about half. This will take from 5-7 minutes, the consistensy will be
a light syrup. Combine remaining marinade and the peaches in a small saucepan. Heat on medium high 2-3 minutes. Add to the wine reduction. Spoon warm sauce over sliced chicken breasts and serve with rice pilaf and a summer vegetable.
Enjoyment: Pour a glass of R&B Cellars 2007 Swingsville Zinfandel for each diner and enjoy. Cheers! |
