R&B Cellars is a long-time supporter of REAF events. The star-studded evening featured Cagney & Lacey's Tyne Daley and Sharon Gless, Susan Anton, Wesla Whitfiled, the cast of the Jersey Boys and Top Shelf's Motown Madness (now at Pier 39), among many others. The event was held at the Herbst Theater across 
from San Francisco City Hall.

Chicken Breasts With Peaches in a Swingsville Zinfandel Reduction

Chicken Breasts With Peaches in a Swingsville Zinfandel Reduction

Ingredients
1/2 cup apple cider 
2 1/4 teaspoons cider vinegar 
1 1/2 teaspoons minced shallots 
1-2 teaspoons minced garlic 

2-3 tablespoons olive oil
4 (1/4 lb)  boneless skinless chicken breast 
3/4 cup sliced peeled peaches (1 large or 2 small peaches) 
1 3/4 cup Swingsville Zinfandel wine

Preparation:
Combine the cider, vinegar and shallots in a zip-close plastic bag. 
 
Add the chicken, squeeze air out and seal the bag, turn to coat the chicken. Refrigerate, turning bag occasionally, at least 30 minutes. 


Remove the chicken breasts from the bag. Preheat a saute pan with the olive oil, add garlic and cook about 1 minute. 
Saute each chicken breast about 2-3 minutes on each side until done.

Set chicken breasts aside on a platter in a warm oven.

Add the wine to the pan and reduce heat. Simmer until the amount is reduced by about half. This will take from 5-7 minutes, the consistensy will be a light syrup.
 
Combine remaining marinade and the peaches in a small saucepan. Heat on medium high 2-3 minutes. 
Add to the wine reduction. 
 
Spoon warm sauce over sliced chicken breasts and serve with rice pilaf and a summer vegetable. 

Enjoyment:
