LANDMARC RECIPE
 
PORCHETTA SALAD WITH 
CHERRY PEPPERS + WATERCRESS

Porchetta, a stuffed and roasted suckling pig dish originally from Italy, plays an important roll in our Spring menu at Landmarc. This easy at-home version of our salad, from Landmarc (at the Time Warner Center)'s Executive Chef, David Nichols, is the perfect dish for a summer afternoon with a glass of chilled Arneis white from Piedmont.

Serves 4

 

12 slices of thinly sliced porchetta (recipe below)

1 head frisée lettuce

2 cups watercress leaves

1 cup, grilled red onions

4 pieces sliced cherry peppers (seeds removed)

1/2 cup grated parmesan cheese

1 cup vinaigrette (recipe below)

 

Slice the porchetta to the desired thickness and put three slices on each plate and top with the watercress, frisée, sliced cherry peppers, grilled onions and parmesan cheese. Drizzle the vinaigrette over the meat and greens.

  

FOR THE PORCHETTA

1 3-pound pork shoulder

1 tsp fennel seeds

3 cloves chopped garlic

1 tsp chili flakes

2 tbsp chopped rosemary

2 tbsp chopped thyme

salt and pepper to taste

 

Begin by seasoning the pork shoulder in garlic, fennel seeds, thyme, rosemary, chili flakes, salt and pepper. Once seasoned, place in refrigerator overnight.

 

Preheat your oven to 350 degrees. Place pork shoulder skin side up on a roasting tray covered with aluminum foil and roast for two hours. Uncover and turn heat up to 500 degrees for 20 minutes or until skin is crispy. Set aside and let rest for 7-10 minutes before slicing.

 

FOR THE VINAIGRETTE

.25 oz balsamic vinegar

.25 oz roasted red peppers

zest of one lemon

.25 oz pepperoncini

half bunch of parsley

.25 oz capers

6 fl oz high quality extra virgin olive oil

 

Combine all ingredients, cover with the extra virgin olive oil and mix.

DITCH PLAINS RECIPE
LEMONGRASS COCONUT CURRY MUSSELS

 

One of our new favorites from the Ditch Plains Spring menu, this recipe comes from Ditch Plains Executive Chef, Steve Eakins.

 

Makes 4 servings

 

Lemongrass Coconut
Curry Mussels
Serves 4

 

1 tbsp olive oil
1 large vidalia onion, thinly sliced
2 shallots, thinly sliced
2 stalks lemongrass, "smashed" and thinly sliced
2 jalapeños, thinly sliced into rings
2-3 garlic cloves, thinly sliced 
2 tbsp yellow 
curry powder or yellow curry paste
(found at asian markets)
3-4 scalllions thinly sliced
3 lbs. mussels, cleaned and debearded
1 14-oz can sweet coconut milk
1 cup dry white wine
1 cup heavy cream
1/3 cup butter
juice of 2 limes
1/4 cup cilantro, chopped
1/4 cup parsley, chopped
salt + pepper
1 lime, cut into wedges for garnish

Add olive oil, sweet onion, shallots, garlic, lemongrass and jalapenos to a large saucepot and set to medium heat. Saute until transluscent.

Add curry and saute to "bloom" aromatics together.

Add mussels to the pot and stir to coat evenly.

Add white wine, then add coconut milk and heavy cream. Cover the pot and steam mussels until opened, approximately 4-5 minutes. Remove the lid, add the lime juice, scallions and butter and mix together.

Remove mussels from the pot with slotted spoon and place into serving bowls. Add cilantro and parsley to pot, add salt and pepper to taste and ladle sauce over mussels. Serve with crusty bread and lime wedges.

NEW SEASONAL MENUS ARE HERE!
Spring is an exciting time for us in the restaurants and we're thrilled with what our amazing chefs have come up with for our new spring menus.
At Landmarc we've said goodbye (for now) to our lamb shank, and hello to great new fare, including salmon tartare, porchetta with cherry peppers and roasted branzino, to name a few.
And at Ditch Plains we're introducing new daily specials from  4pm on. In addition to our Surfer Sundays (and Mondays, too), we're adding Taco Tuesdays, Chicken for Two every Wednesday, Thursday night Crab Boils, Market Catch of the Day on Fridays and Saturdays, to top it all off, we'll be serving up some amazing truffle lobster mac + cheese. Your week never looked so good!

Nothing says summer better than fresh seafood and we're happy to announce that in addition to our amazing Surfer Sundays (and Mondays, too!), Ditch Plains (Upper West Side) is now offering Crab Boils every Thursday night from 4pm to 2am. For $40 indulge in all you can eat buckets of blue crabs, jalapeño hushpuppies, potato wedges, corn on the cob and our famous ditch'wiches! We work in Manhattan, but we're not opposed to a little travel now and again!  Last summer we began offering our catering services in the Hamptons, and we couldn't be more thrilled to continue the adventure this summer.  We've already got a handful of events booked for this summer, from crab boils on your deck to intimate dinners on the beach, but it's a long summer and we've got plenty of time to help you plan your summer events.  Hey, it's a tough job, but somebody's gotta do it!

Thursday, October 11th-14th, Gearing up for its fifth year, the Food Network New York City Wine & Food Festival presented by FOOD & WINE pays homage to one of the greatest dining cities in the world. It's the only festival in New York to bring together both legendary culinary icons from around the globe and America's most beloved television chefs, plus all proceeds benefit The Food Bank of New York as well as Share Our Strength. Marc is proud to be participating in a number of events this year:
* Thursday, October 11, 10 pm: CHOPPED at Landmarc (at the TIme Warner Center). Have you ever wished YOU could choose the ingredients that go in the mystery baskets on CHOPPED, the top-rated Food Network show? Now's your chance! We're turning the tables on your favorite Chopped judges at this kinetic, late-night soirée, which is sure to be one of the most exciting events of the Festival. MONDAY NIGHT WINE + DINE AT LANDMARC [TRIBECA]

Every Monday night, starting at 4pm, we'll be offering a selection of half and full bottles of incredible wines that are not regularly available on our wine list. The wines will be priced at $13 for half bottles and $26 for full bottles.

In addition to these incredible wine deals, every month Tribeca's amazing Executive Chef, Angelo Schifilitti, will be serving a different French Classic dish to accompany our amazing wines. May's dish is Chicken Piperade, a stunning sauté of  red, green, and yellow bell peppers, Spanish onions, garlic, fresh tomatoes and chicken. Ours is accompanied by polenta and mixed greens.
