MARC'S SUMMER GRILL TIPS  


 

· If using charcoal briquettes, make sure you build them into a pile before lighting the grill - this will help with even cooking.

· Add wood chips to your charcoal to add some smokiness to your food.

· Wipe the grill with oil before cooking to prevent food from sticking to it. 

· Leave it be!  Let the meat naturally release from the grill and only flip it once.

· Never use a tool that will pierce whatever you're grilling - it will rob it of its juices and dry it out. Always use tongs or a spatula!

· Simply seasoning with salt and pepper can go a long way.

Located at the gatehouse at the entrance of the new Pier 1 at Brooklyn Bridge Park, Ditch Plains Drop In offers some of your favorite Ditch Plains classics (lobster rolls, ditch dogs, sloppy dogs)plus a great selection of salads, wraps and kids food. Perfect for a beautiful day in one of the City's nicest parks! Drop In is open on the weekends for now but we'll be there full-time in June!

Please disregard the Chinese Zodiac: we remain in the Year of the Pig. At least that's what chefs and food fanatics alike would have you believe. For Chef Marc Murphy, the world's seemingly endless variations on pork continue to inspire and delight. His "Pig Trot Around the World" presents an all-new menu dedicated to a sophisticated brand of pigging out. Chef Murphy will be on hand to guide guests on his round-the-world tasting adventure where even the drink pairings have a porcine play.

 

The night starts with an American favorite, homemade potato chips with bacon dip served with a tall, cold glass of locally brewed Porkslap Summer Ale. From there, guests make stops in France for a Provençal take on pork, Spain for chorizo, Italy for porchetta, and finally return home for an (almost) classic American hot fudge sundae made with bacon and served with Moo Thunder Stout.  And along the way there will be beverage pairings to bring out all the pork deliciousness.
