WINTER RECIPE 
 french onion soup

FRENCH ONION SOUP


serves 4 to 6

 

1/4 cup olive oil


3 medium white onions, sliced 1/2 inch thick


3 medium red onions, sliced 1/2 inch thick


2 cups dry red wine


1/4 cup Worcestershire sauce


3 cups chicken broth


3 cups beef broth


1 2-inch square piece parmesan rind


2 teaspoons fresh thyme leaves


1 bay leaf


1 tablespoon kosher salt


1 teaspoon freshly ground black pepper


1 baguette


1/4 cup olive oil


12 1/8-inch thick slices gruyere cheese (about ¾ pound)


1/2 cup freshly grated parmesan

 

 

Heat oil in a large pot over medium high heat. Add onions and cook until caramelized, stirring occasionally, about 25 - 30 minutes. 


Deglaze with red wine, and reduce mixture until almost all the wine is evaporated, about 10 minutes.


Add the Worcestershire sauce, chicken broth and beef broth. Bring to a slow boil, then reduce heat down to a simmer. Add the parmesan rind, thyme and bay leaf.

Simmer for about 30 minutes

 

Season with salt and pepper, remove bay leaf and parmesan rind

 

Preheat oven to 350ºF. Slice bread into 1-inch thick slices, toss with olive oil and toast in the oven for 15 minutes

 

Place hot soup in individual crocks. Place two croutons in each crock and top with 2 slices of cheese and 1 tablespoon of parmesan cheese.


Place crocks on a tray and put under the broiler until cheese is golden brown, about 3 minutes.



MARC'S TURKEY TIPS

Let the  turkey sit at room temperature for about an hour before you roast it. A cold bird will cool the oven down and it will cook less evenly. Plus, bringing the bird to room tempature makes it a little juicier.

Start your oven at 400 degrees for about 30 minutes, then lower the heat to 350 for the duration of the cooking time.  This ensures a nice golden brown bird.

Make sure you let the bird rest before you slice it.  If you carve too early, you'll lose alot of the juice and the turkey won't be as moist.

For a cripsy and more flavorful turkey, rub butter under the skin before roasting it. You can even get creative and add your favorite herbs to the butter. I personally love to use coriander in mine.

Don't forget to oil and season the bird!  Rub the outside of the whole bird with oil then season with salt and pepper all around and in the cavity liberally. This ensures brown skin and a very tasty bird!

NEW YORK CITY WINE & FOOD FESTIVAL
 
 
 oyster shootersThe Food Network's New York City Wine & Food Festival was in town for the long weekend, and Marc and Benchmarc Restaurants were involved in many of the events around town. On Friday night, Marc and CHOPPED host Ted Allen hosted the first annual CHOPPED party at Landmarc at the Time Warner Center. CHOPPED judges, including Amanda Freitag, Aarón Sánchez, Alex Guarnaschelli, Scott Conant, Chris Santos and Geoffrey Zakarian were on hand cooking up some of their favorite dishes and posing for fan photos while show devotees also got to meet their favorite CHOPPED champion, Madison Cowen. You can see photos from the night here!

On Saturday, Marc stopped by the Eater lounge to deliver some Benchmarc Events sandwiches and desserts to the hungry bloggers. Eater caught up with Marc between events and had a chance to talk about the much-anticipated opening of Ditch Plains on the Upper West Side. Read about it here.

Sunday found Marc at the Grand Tasting, the festivals' ultimate culinary showcase. Marc and his team from Landmarc served up his famous Orecchiette alla Norcina to over 800 guests at Pier 54.

And while this year's festival might be over, Marc and his team are hard at work getting ready for all of the events at the South Beach Food & Wine Festival in February. Tickets go on sale October 25, so make sure to get yours and come see us in Miami!
