New Cheese
|
|
Emmentaler Swiss
Be sure to try our newest cheese. Emmentaler Swiss
is made by Bruce Workman at the Edelweiss
Creamery in Wisconsin. This cheese is touted as
some of the best aged Swiss in the United States. It is
3 years old and is low in salt. What an excellent way
to jazz up a rueben sandwich. Try it as table cheese,
on salads, or even as fondue!
A Note About Cheddar
Our aged cheddar cheese from Chalet Cheese Co-op is
now 7 years old. The older cheese is, the sharper it gets.

Pork Products
|
|
Available at Hansen's Moo Roo and the Outlet
If you're looking for quality pork, we have a wide
variety of pork products available: bacon, ground pork
patties, several varieties of hams, sirloin roasts,
American chops, Iowa chops, whole tenderloins,
ground pork, ground sausage, and sausage links.
The pork comes from Iowa Farm Families based out of
Marshalltown, Iowa.
The pork is gluten free because it is cured without
using gluten-laced
additive injections, commonly used in other pork to
artificially enhance color. In addition, no extra water is
added.
Pigs used for these pork products are on vegetarian
diets and are pasture farrowed when weather permits.
If a pig becomes ill and must receive antibiotics, they
are removed from the program. No hormones or
growth stimulants are used. Lastly, Duroc genetics
are used, and the pigs are bred for a higher PH in the
meat, which means the pork products are more moist
and tender.

Milk Storage
|
|
Keeping it Cool & Fresh
The best way to keep milk fresh is to keep it cool. As
air temperature goes up, bacteria growth accelerates.
This can be challenging in the heat of the summer. It
is best to transport milk in a cooler as opposed to a
hot car trunk. The temperature in the trunk of a car on a
sunny day, can easily reach 140 degrees.
Leaving milk sit out on a
counter is also
detrimental to its shelf life. Milk temperature will rise 1
degree for every 5 minutes at a room temperature of
70 degrees Fahrenheit. As air temperature goes up,
temperature rise also increases. Lastly, the
refrigerator door is said to be the warmest spot in the
refrigerator. For a longer shelf life, keep milk in a
refrigerator cooled to 38 degrees Fahrenheit.

Cow of the Month
|
|
Dazzle
Dazzle is September's Cow of the Month. She was
chosen because on our monthly test day she
produced the most milk of anyone in the herd: 136
pounds! That equates to 17 gallons of milk in just one
day. Dazzle is 7 years old and in her lifetime, she has
given 150,000 pounds of milk. Dazzle is a rare cow in
that in the five pregnancies she's had, she's given us
five daughters. Their names are Delhi, Duke, Dana,
Dayz and Dabble, all very nice looking cows. Dazzle
is a wonderful mother, a sweetheart and very gentle,
as you can see in the photo. If you ever come see her
on a tour you would notice her beautiful mellow eyes
and her crooked neck, meaning she will look at you
with her head and neck turned. She also likes to
snuggle up to people, hoping for a tail rub. Once you
start that, she will be your friend forever.
