 June is my favorite month for fish and seafood, so let's get grilling!

This month brings us flowers, green trees, warm sunny days (I hope) and many great seasonal choices from our oceans. 

Alaska really opens up this month with Copper River King and Sockeye salmon and my personal favorite, the mighty and legendary Yukon River King salmon. Nome's fresh King Crab season opens on the 15th and we should have fresh king crab on our plates by the 20th. Then there is Black Cod, Halibut and even that occasional treat, Halibut cheeks. All these fisheries have been certified by the Marine Stewardship Council as sustainable with excellent fishing practices.

Chesapeake Soft Shell crabs are in full swing this time of year and coming in plump and wiggling. There is nothing like a soft shell crab po' boy with sliced avocado and spicy mayo! Call ahead and we will save you some on the weekends.

Gulf of Mexico Yellowfin Tuna are running fat and sassy during the summer months. We buy our sashimi quality tuna whole and are cutting  our steaks directly from smaller fish in the 80 pound range for the perfect cut.  

Father's Day Special: Live 1 1/2 pound Maine Lobsters-3 days only- June 13 thru 15th. Only $15.00 per pound! Call ahead and we will cook and chill them for you, no charge.

Yukon River King Salmon are the very best salmon swimming, in my personal opinion. These fish bulk up to run the river and are extremely high in oils and fats which their bodies need to get them to the source of the Yukon River, a mere 2000 miles from the ocean! This compared to the Copper River which is only 300 miles long. The longer the river, the richer the taste and these "King of Kings"  will prove that on your plate. These are pricey fish but don't miss your opportunity to try this very short season salmon! These should be available about the 20th of the month. We will keep you posted.

Yellowfin Tuna

Yellowfin tuna are found worldwide and are probably the most common fresh tuna available. These fish are long line caught and their conservation status is one of the best. We buy whole fish in the (small) 80 pound range and fillet them as needed. This way the fish comes off the bone and is at its freshest.. Yellowfin tuna is fantastic in every way, from sashimi to tartare to a terry-aki seared steak on the grill!
We negotiated a great deal on our whole this week so we are offering our premium sashimi quality yellowfin tuna at a great price!

These are by far the very best Gulf shrimp to toss on the barbie. Definitely one of our very favorites on the grill all year around! Pre-marinated with our fantastic Tequila Chili Marinade, these peeled and deveined jumbo shrimp are ready to hit the grill. A perfect treat for Dad on Father's Day or just indulge yourself!

 Sockeye Salmon

They don't call it red salmon for nothing!
These are the famous Copper River run of sockeye salmon that you here so much about. This is the first big run of sockeye salmon of the year and therefore the most talked about. There is no denying that this brilliantly red fleshed,  robust flavored fish is well worth the wait. The initial price of that first run had record retail price of $65.00 per pound! I passed on those fish. The price started at $40.00 per pound retail and drops about $5.00 per pound per week. For those of you that waited for a great price and those that have not had the pleasure of trying this awesome salmon, now is the time! Try this fish with just a little olive oil and our herbed Mediterranean sea salt so you can get the full flavor of the salmon. On the grill or in the oven, one word of caution, sockeye is very lean and cooks quickly so be sure to take that into consideration when cooking it.

 Farmed Striped Bass

 Striped Bass-stuffed
These fish are a cross between saltwater striped bass and freshwater white bass. Our farmed stripers are coming from Texas and are grown in large tanks creating a very environmentally friendly and sustainable fish. Often call "sunshine bass" or "wipers", these fish are mild flavored and versatile. Try one on the grill whole with a citrus stuffing or in one of our marinades. Fillets also work well on the grill. I would compare these fish to red snapper and with the price of snapper these days, this fish is a great alternative to any snapper recipe.

Oyster on the Halfshell

 Malpeque
From Prince Edward Island, these oysters are one of the more popular of the East Coast Canadian oysters.They have a nice balance of sweet and saltiness with a clean finish.
Malispina
From Malsipina Cove on the Sunshine Coast of British Columbia, just north of Vancouver, these firm oysters have a mild clean taste with a watermelon aroma.  
 Graham Point
Another Price Edward Island oyster that is fairly new on the block.These oysters are harvested
in waters fed by the Gasperaux River and have a gentle briny flavor with plump meats.
 Olympia
This are unique oysters come only from the waters of Olympia Peninsula, Washington. They are the only native West Coast oyster. They have been farming these for over 100 years, by natural set and hand harvested. They are extremely small delicate creatures and expensive. It takes 250 to fill a pint container! An Oly is small but packs more flavor than a full sized west coast or east coast oyster. Its the sweet metallic, and celery salt flavor that makes these worth a try!
 
Crisp dry white wines are great with oysters as are most sparkling wines and, of course, a good beer.
