Welcome to a Healthy New Year!
whole snapper 1.5 inch

There is no bad time to make a good resolution. This time of year seems like an especially good time to make a good resolution for yourself and your body. A little regular exercise and some good eating habits will go a long way towards shedding some of that holiday cheer and making you feel better all year long!
Fish and seafoods can play a big part of a healthy diet. I receive daily e-mails from various sources that tout the benefits of fish and omega-3's. I will place links to these articles and studies on the Health page of our website. A minimum of two servings of fish per week is the general consensus for good health. Resolve to try some new fish and/or recipes. We are here to help and guide you to healthy eating.
We have many simple and tasty recipes on our website. There is also a Fish Log to download (on the home and recipe pages) so you can keep track of your fish samplings and tastings. You can coordinate this with our recipes and be really organized!
We really  try to stay current on all sustainability issues to insure that the fish you eat is a viable resource and one that you can feel good about eating. More on this in future newsletters.
Remember that moderation is the key, eat a little bit of many things including all your favorites!
Speaking of favorites, don't forget to try some of our ready to go meals and fresh soups for home and our sushi and lunch menus for on the go!
Once more thanks to everyone for a great year!

Besides cold weather, January brings us...

ORIGINAL HOME MADE MARINADES
Black cod in miso 1 inch
The easiest way to cook a piece of good fish is to use a marinade. It can be as simple as olive oil, salt and pepper or you can try one of ours...

  Chili/Tequila

A great choice for fuller flavored fish, but my personal favorite for this marinade is Shrimp on the Barbie!
  Ginger Garlic

Fresh ground ginger and garlic make this a classic, bold and flavorful. Its is excellent as a marinade and really shines as a dipping sauce and salad dressing.
 Miso

Soy paste and sweet rice vinegar. Especially great on Chilean bass and Black Cod.

Terry-Aki

My wife, Terry's very own Teriyaki style blend. This goes great with all fish and seafoods, and even beef!
 Thai

Spicy and very flavorful. If you like Thai food you will love this marinade. Goes great with most fish (chicken too).

Chimmichurri

Roasted red peppers, fresh garlic, parsley  and olive oil make this a favorite on most fish. Makes a great sauce for dipping too. (I love it on empanadas!)

These six marinades are great on a wide variety of fish and seafood. The key to a marinade is timing. You want your marinade to compliment the fish not overwhelm it. We suggest marinating the fish 15 to 45 minutes with most marinades at room temperature. If your fish is not ice cold it will cook more evenly when it hits the heat. This is especially important for fish such as tuna when you want a warm red middle but not too cooked on the outside. Miso marinade is the one marinade in which the fish benefits from longer marinating times; hours and even overnight.
Marinades are regularly priced at $10.00 per pound.
We want you to taste them all. So January 2nd thru the 13th,
we will give you enough FREE marinade to go with any of your fish or seafood purchases.
We recommend 1/4 pound of marinade for 1 pound of fish.
Now is the time to try something new, on us!

Salmon roulades are a split fillet of salmon filled with hand sliced smoked salmon and a spinach and white cheddar filled which is then rolled and slathered in our tequila/chili marinade. You simply bake them in a preheated 425 degree oven for 15 minutes then under the broiler, just to brown.
Regular price on these $18.00 per pound

 $14.00 per pound.
Call ahead and we will make as many as you need or just stop by a grab a couple of roulades for dinner tonight.
KONA KAMPACHI
This was my favorite new fish of 2007!

People think of kampachi, which is a type of amberjack, as a fish for sashimi and sushi but it is very versatile in many other recipes also. Try it seared on the grill or pan sauteed for a taste you will soon come to love as much as we do. Check out their website: Kona Kampachi
We have received a special price from our supplier to start the new year so we are passing it on to you. Here is a  great recipe for kampachi that you are sure to love:

Just substitute Kampachi for Bass

Now is a good time to try something new!
