I can see Christmas peeking around the corner with the New Year close behind! Where does the time go!?
It goes for celebrations and good times spent with family and friends. We should all be thankful for what we have and hopefully have time to share with others less fortunate than us.

We just had a wonderful Appetizer/Small Plates class with 10 new recipes that would be fantastic for your holiday entertaining!  Clams Casino, Salmon Tartare, Terry's Oyster Bisque, and Smoked wrapped Salmon Sea Scallops were all big hits. you can find all the recipes and more at Dirksfish.com on the recipe page. Try a couple, you will love them.

We are still getting those awesome Fresh Alaskan King Crab legs. Weather plays a big factor this time of year. The crab is not coming this weekend due to 70 to 90 mile per hour winds! The next shipment will be Thursday, December 6th (fingers crossed). We are hoping to have them at least until Christmas so be sure to take advantage while you can.

Here are a few of the seasonal and well managed products to look for at this time of the year...
 
Nantucket Bay Scallops-the sweetest scallop in the sea!- call ahead for a preorder to be sure you get some. They are pricey at $45.00 per pound but you will never taste a sweeter scallop!
Alaskan King Crab Legs- Both fresh cooked and  live. Simply said, until you have tasted these, you haven't really tasted king crab. With any luck, these will be available through the holidays. $30.00 per pound.
We will have good frozen crab when the fresh season ends. These are jumbo legs from Alaska and run $24.00 per pound
Vancouver Island Farmed King Salmon- This is the time of year to try this winter staple. The farm is noted as one of the best in ecological practices and is trying to gain organic status. Definitely a fish of choice in any season. $18.00 per pound.
Cold Water Australian Lobster Tails- These are among the very best lobster tails that you will ever eat! They are not cheap but then the best never is! Cut your cost by using smaller tails matched with other seafood or even a good steak! $60.00 per pound.

THE ART OF MAKING SUSHI
Sushi Boat Tray 1.5
This is a great class for the person eager to learn about making your own sushi at home. We will be demonstrating four maki and three nigiri, while you are sampling our homemade miso soup and fresh tuna/avocado salad. After that it's hands on and you will be rolling on your own.
Bring a friend or two, and your appetite because it's all you can eat!
There will also be a presentation of that wonderful drink, Sake, by Chicago's premier expert, Larry Mechanic from Windy City Sake.
Bring a bottle of your favorite beverage (sake maybe) and be prepared for an evening of fun and food!
