July is the true start of summer and a prime time to be out there grilling!

Tequila Chili Shrimp on the grill!
The choices this time of year are vast. We have all of your regular favorites but this would be a great time to try and develop some new ones.
I have to mention the Yukon River king salmon only because it's only around for one more week, the first week of July. This is the very best salmon of the year in my opinion and of very limited availability. Try some and you will be eagerly awaiting more next year!
Try adding some other fish to your grilling repertoire like some of our specials this month, Corvina, Black cod or Squid. The Kampachi and Walu are worth a try too. They are usually available, great on the grill and may become one of your favorites!
I'm sorry to say that due to production and shipping problems at the plant in Nome, we won't be seeing any fresh king crab this July. Sad but true.

Yellowfin Tuna

Fresh cut off the bone
We were able to optain a special buy for the week of the Fouth of July which we want to pass on to you!
Our wild Yellowfin tuna is line caught from either the Gulf of Mexico or Pacific Ocean. Yellowfin tuna get as large as 500 pounds but the fish we see in the shop tend to be the smaller ones around 125 to 150 pounds (Have you ever tried moving a 500 pound tuna?!). We get the fish within a couple of days of being caught and fillet it as we need it, resulting in the best tuna available for sushi, tatare, and for the grill.
Tuna is sometimes referred to as "ahi". Ahi in the Hawaiian language simply means "to burn". Before modern fishing methods were used, tuna were caught on hand lines. You can imagine a couple hundred pound tuna on a hand line would have the line "burning" through your fingers trying to haul that fish in! So by that definition all tuna could be considered to be "ahi" tuna.
Paired with our fresh marinades, tuna
is right at the top of the list for the grill. An important note about tuna, since tuna can be eaten raw, just remember that you can't undercook it, just a couple of minutes on each will do the trick.

Corvina Fillets

Corvinas are the largest members of the weakfish or drum family. They are caught all up and down the eastern Pacific. Ours are usually out of Central and South America. These fish are very popular down there, especially for ceviches.
Corvina is a sustainably harvested fish so it is also a good ocean friendly choice. I find corvinas to be firm mild fish similar to groupers and snapper that works well on the grill as well as the oven. It's certainly a much less expensive option and really worth a try! I'd suggest using our Thai or Chimmichurri marinades and doing a basic grill recipe.

Black Cod/Sablefish

Black cod in marinating in miso
Black cod comes to us from the deep cold waters of Alaska. It is wild caught on deep water long lines and is one of the most sucsessful and sustainably managed fisheries around.
Black cod also goes by names such as sablefish or butter fish but by any name is a rich, buttery, "melt-in -your- mouth" fish. It makes a good substitute for Chilean sea bass and is equally good.
Smoked sable is actually black cod smoked and is an excellent appetizer, snack or brunch item. We usually have some smoked in stock, ask to try some.
Black cod in miso marinade is a classic recipe for the grill. Next time you get some black cod, have us put it in our miso marinade and leave it in the marinade for a couple of hours or even more. Miso is light and will not overpower the fish like some other marinades. Try our variation with our crispy crabcake crumbs on top.

Fresh Loligo Squid

The fresh squid (calamari) that we carry is caught in the waters off of Rhode Island and are landed at Town Dock. This is probably the best squid available. The domestic porduct arrives more quickly to us than imported ones and therefor has a much better quality and taste. These squid come to us alreay cleaned and ready for grill, sushi, or in a sauce.
The largest squid caught to date was one last December caught off of Japan and was 24 feet long! That's a lot of calamari! Squid are usually caught at night on jigging hooks and are attracted to the floodlights that the fisherman use.
The easiest way to do squid is to marinate it in a little olive oil for a half hour at room temperature, season to taste with a pinch of salt, pepper and oregano, then on the grill for about 45 to 60 seconds per side. Tentecles and tubes grill equally well.
