Just for the Halibut...
 
There was one man in town that was very successful at fishing. He always brought home lots of fish. The game warden asked him how he did it, so the man said he would take him fishing the next day.
Once they were in the middle of  the lake the man took out a stick of dynamite, lit the fuse and threw it in the water. After the explosion fish started floating to the top. The man took out his net and started scooping up the fish. The warden said that was illegal.
The man took out another stick of dynamite and lit the fuse. He then handed it to the warden and said. "Are you going to fish or talk?"

Here comes August, another prime month for hitting the grill with fresh seafood! Hot summer days mean warm summer nights, prime for kicking back with friends, some awesome grilled fish and/or seafood and a cool drink! 

Wild salmon is one of you best choices for grilling any time of the year and the Sockeye and King salmon are at their low prices of the summer.

This is the last steady month for Softshell Crabs, so be sure to indulge yourself!

 If you are a fan of full bodied flavorful fish or are a displaced Easterner (you know who you are) we will be featuring Bluefish this month.

Wahoo or Ono, no matter what you call it, it's a favorite of ours on the grill. It is very high in omega 3 fatty acids and has a great full bodied flavor*.

*This is one of the four fish recommended that pregnant and nursing women refrain from consuming.

All the trout that is available on the market today is farm raised. Most of the fish comes from farms in Idaho though there are farms in other states such as North Carolina and Wisconsin. Trout are raised in ponds or race ways in clear cold running water and are a very sustainable fishery. They grow to a marketable size (12 to 14 ounces) in about 1 year. Most of the rainbow that we sell comes in whole and we cut it to order for maximum freshness.
It's very versatile from frying to grilling, whole or filleted. There is nothing like a boned and stuffed whole trout baked in the oven or try it cedar planked with a garden fresh pesto glaze. 
The red color of the trout fillets comes from what they eat. in the wild usually small crustaceans and cephalopods with contain canthaxanthin. The same canthaxanthin (man made) is added to the trout feed to give them the bright red color. 
This are an versatile and tasty fish that is great for summer grilling and this week is a good time to try it out!

There is no other fish that says "East Coast" more than bluefish. I don't even have to explain it to someone from Boston or North Carolina, they know what I mean.
 Blues are caught up and down the Atlantic coast. They are usually caught in fish traps though many are landed by recreational fisherman for their own use. Bluefish are voracious feeders sometimes eating twice their own weight in one day. Smaller blues are called "snappers" and larger blues are called "choppers". Parents even pull their kids from the water when schools of bluefish feed close to shore!
Thesefish are full flavored with a darker meat that cooks up almost white. and high in healthy omega3s. The flavor may be a little strong for the mild fish lover but these fish really taste great grilled or smoked.
Try cooking these with a basic grilled fish recipe or simply bake in the oven then under the broiler to brown.

Wahoo is a close relative to king mackerel and is one of the fastest fish in the sea having been clocked at more than 50 miles per hour! That's what we call "fast food!" Wahoo was originally caught mainly off the Hawaiian island of Oahu, hence the name. Its called ono in Hawaii, which means "good to eat" referring to its flavorful, flaky white flesh.  These fish range all over the world. Our Wahoo comes from the Pacific: Hawaii or Panama and from the Atlantic, off of Brazil. They are plentiful, quick to reproduce and a sustainably good choice.*
If you like mackerel , bluefish, or sardines then you will probably like Wahoo. We had some the other night soaked in our Chimmichurri marinade for about 1/2 hour and tossed on the grill for about 5 minutes per side. We grilled some potatoes, onions, and peppers for a side dish. Then rounded it out with some fresh tomatoes and herbs from the garden. Yum!
 
 
*King Mackerel (and probably wahoo) are one of the few fish  that only pregnant and nursing women should NOT eat due to higher mercury levels. For the rest of us it's a great choice!
