Join us as we roll through our beginning sushi class. We will serve up miso soup and fresh tuna salad with ginger garlic dressing while we show you how to create 4 maki rolls and 3 nigiri. You then roll your own until you can eat no more.

March and spring is in the air!
This is a month filled with many anticpations; Halibut, wild salmon, shad roe, Texas softshells and the first day of spring!
Lent is in full swing this month! Halibut season opens March 10th and will be a regular item from then on.
Wild king salmon should start to become readily available also.
Shad roe and softshell crabs will be towards the middle to the end of the month. If you have any interest in any of these items please call and I will let you know as soon as they are available.
Passover is coming soon and we would love to grind your fish or provide you with some of the freshest gefiltefish in Chicago. Let us know what we can do to make your holiday celebration a success.
After a cold winter, all you fair weather grillers(you know who you are!) should be starting your season early! We have great marinades, grill planks and many ideas to guide you along.
Lets fire up those grills!

Rainbow Trout Farm raised Oncorhynchus mykiss

Rainbow trout are one of the oldest farm fisheries in the United States. These fish have been raised in Idaho since the early 1920s. (Ours are much fresher than that! ) About 70 million pounds are grown every year, most for comsumption and the rest for stocking lakes and rivers. Wisconsin produces some great rainbow trout in Palmyra, about 90 miles from here.
Trout are mild in flavor, low in fat and sodium, and are high in the omega 3 fatty acids that a been proven to be so good for us in so many ways. Trout can be used in most recipes. We always say "When in doubt, rainbow trout!". For a simple and fast way to cook trout, try this pesto recipe.

This is my new favorite fish this year! Grown in the clean waters of the Pacific, off the Kona coast of the Big Island ofHawaii, it is healthy, pure and sustainable. The farming method is considered a "green" fishery(check out the link on the website). I dropped the considerably price to intice you into trying an expensive but superb selection. This fish is terrific as sashimi, sushi or quick seared on the grill. Its fantastic on a sashimi plate or try the simple blackened recipe below.
When blackening kampachi, have us skin your fillets and just lightly dust your fillets before cooking. We want you to taste the fish! |
Rock Shrimp Sicyonia brevirostrist

Rock shrimp come from Florida and have a very hard shell, similar to a lobster. They became more available in the 1980s after a machine was invented to split the shell and de-vein the shrimp.Their taste is somewhere between a lobster and a shrimp. They come from deep water, 120 to 250 feet, just like lobster. I keep mentioning lobster and even though they are shrimp, I personally like these better than lobster and they are one of the tastiest shrimp you can cook. We always sell them peeled. Use them in pastas, paellas, stir frys, and fried. If you have not tried rock shrimp before, I would highly suggest that you do so this week!
For lunch just the other day, I dusted some rock shrimp in corn starch, fried them in a little hot canola oil until they were crispy(about 3 minutes) and dipped them in our Ginger Garlic Marinade. They were quick, easy and very tasty! Also try rockies with this recipe...
