February is National Heart Month!
A simple fish dinner may be one of the best things you can do for you heart!
The omega 3 fatty acids found primarily in fish are proven to be benificial to your health in so many ways, especially your heart. A varied diet including fish at least twice a week is part of a heathly diet plan. Fish such as herring, mackerel, salmon, sardines, trout, and tuna contain higher amouts of omega 3's than other fish but almost all fish contain some level of the healthy oils.

Mahi Mahi (Dolphin Fish)-Wild caught

Not to be confused with our friend "Flipper", mahi mahi is the Hawaiian name for dophin fish. It is a member of the tuna family. This fish usually comes to us from Costa Rica, U.S. Gulf of Mexico, or Panama, though it swims in most of the oceans around the world. It is wild caught, mostly by trolling or longline and is very sustainable due to large fast reproducing populations and large range. Mahi is well known in culinary circles for its medium delicate flavor and moist flesh. It lends itself well to most methods of cooking from grilling to a fast pan saute. We use it in many of our soup recipes. You could use our basic fish recipe or any of our grilling recipes. Try our friend Neil's recipe below for a quick dinner.

This fish is truly the "King" of all salmons. In its wild state, king salmon can reach up to 126 pounds, thought the official world record is 97 pounds 4 ounces. That fish would serve 100 people for dinner if you had a big enough pan! Since wild salmon are scare due to the winter season, you will find these farm raised Vancouver kings to be a great alternative choice. Salmon are very rich in omega 3s and not only taste good but are good for your heart! There is not much you can't do with salmon! Try this recipe for something different, it's a favorite at my house.

Shrimp is one of my favorite foods from the oceans. The picture says it all! Did you know that there are more than 2000 species of shrimp in the world? We have probably only had about 20 different species here in the store. Wild gulf shrimp are hard to beat for flavor and texture and is our hands down favorite. Wheather you simply boil them or delicately infuse them into into a stock with which to flavor your best paella, shrimp can be used in so many recipes. Here is a great shrimp recipe that is perfect for a Mardi Gras celebration!
