Dirk's Fish wants to thank all our customers/friends

helping make 2006 a great year! We look forward to
another year of presenting you with an awesome
collection of the freshest fish and seafood in
Chicago.
With our new online newsletter we plan to keep you
up
to date on seasonal specialties, special prices and
tasty recipes.
All of our resolutions should be to eat better and feel
better about
our choices using sustainable fish and seafoods. This
month, each week will feature a
fish or seafood,
special
price and an easy healthy recipe. We will incorporate
some of our other products in the recipes to make
them even easier. We hope you will
take advantage of our selections and expand your
recipe base without expanding your waistline.

Atlantic Salmon, Farmed (Salmo salar)

Atlantic salmon is farmed in many parts of the world.
The best Atlantic salmon in our experience comes
from
eastern Canada or Maine. We bring in these fish
whole and fillet them daily.
You hear a lot about farmed salmon being a poor
choice, this is simply not true. Salmon farming has
come a long way and is constantly improving.
Twenty five per cent of the fish in the world is farm
raised and that will continue to grow. If not for
farmed fish, the wild stocks
would be far more seriously depleted
Farmed Atlantic salmon are excellent quality, high in
omega-3s, readily available, and consistently priced.
This is the premiere fish for sushi.
Salmon can be used in just about any recipe
imaginable, from tartar to plank smoked on the grill.

It is very easy, healthy and takes
only minutes to prepare and cook.

Fresh Pacific White Shrimp, Wild(Penaeus vannamei)
On sale: $20.00 per pound (regularly $24.00)
There are many varieties and types of shrimp on the
market today. In my opinion, there are none better
than wild caught Gulf of Mexico and Pacific shrimp.
These have the flavor and texture that are not found
in the supermarket shrimp, which are typically tiger
shrimp. Most shrimp are frozen at the dock and
thawed when sold, which is probably best for those
of us not living on the coast. These shrimp are
caught fresh and flown to us next day, fresh! The
Pacific white
shrimp are available out of Baja California for about
ninty days out of the year and now is the time!
These may well be the best shrimp I have ever
tasted.
These shrimp are head off, shell on ,and graded
16/20 to the pound. Simply boiled or steamed then
peeled and eaten with garlic butter or coctail sauce,
they are great. You can split the back of the shell,
soak them in our Tequila Chili marinade then toss the
shrimp on the grill for a couple of minutes for an
unbelievable taste!

Red Snapper (Lutjanis species)

Did you Know that there are more than 75 species of
snapper in the world? I usually carry a couple of the
more familiar varieties, such as Florida red snapper
(Lutjanis campechanus) and Yellow tail snapper
(Ocyurus chrysurus). Most snappers are very similar
in taste and texture, mild and flaky meat. You will
find snapper works for all cooking methods. This type
of fish cooks up whole, very nicely. in the oven or on
the grill.

a very easy and healthy recipe that is
quick and tasty too with a touch of Cuban flair!

Black Mussels, farmed (Mytilus edulis)
On sale $3.50 per pound (regularly $5.00 per pound)
It's hard to beat a cool mixed green salad, a big
streaming bowl of mussels, a crusty loaf of fresh
bread and a great bottle of chilled wine. Our black
mussels are raised in cold clean waters off of Prince
Edward Island in Nova Scotia. They come to us live
and very well cleaned. We hand pick them for you so
what you take home is the very best of the bag!
Mussel are
where its at; warm, cold or smoked, they are
succulent little morsels
on your plate. Simply steamed over a wine,
vegetable, and water broth or incorporated in a
succulent paella (we love this!) you can't find a more
versatile shellfish
for the same low price, anywhere!
