Valentines Day Edition

Greetings! 

 

Don't let the short cold days of winter get you down, this is the perfect time to sit in front of a warm fire and plan for the upcoming season. Valentines Day, Easter just around the corner, then followed by communions, graduations and my favorite,  BAR - B - QUE's.  There is just so much to plan for.  

  

The annual Catersource Conference and Tradeshow is at the end of the month and I am happy to say that Aimee Newby, one of our Sales Managers, Lisa Tevis, our Director of Sales, as well as myself will be attending.  Las Vegas is the gambling capital of the world, but is also the food capital of the world. So much to see and learn and experience.  We use this opportunity to tweak our menus, review the latest trends and hone are culinary skills.  We look forward to taking the knowledge that we gather and translating it into even better cuisine and services for our clients.

Solar Energy
Jacques Reception Center has made a commitment to renewable energy.  With so many uncertainties in the world, turmoil in the Middle East, high energy costs, an unstable power grid, and other factors, we decided that Solar Power was the right choice and at the right time.  It has taken months of planning, a financial commitment of over $250,000, constant collaboration with the architects, and engineers, all to produce a 70,000 kilowatt system that will be fully operational in early Spring.  This, combined with other "Green" initiatives we are implementing, will help us in protecting our environment and controlling the souring cost of energy.   We will keep you updated on our progress and some of the other changes involved in our "Going Solar" program.  For more information on solar power and renewable energy, check out our installer, Garden State Solar.
Easter Specials
You will have plenty of time to hide your Easter Eggs, while our chefs prepare a succulent Veal Roast or Glazed Spiral Ham for your holiday feast.  Among some of our holiday  specialties are Italian Antipasto, Sauteed  Asparagus and our newest dessert,  Gourmet Mini Cupcakes. Scallops
Cooking Valentines dinner for your Special someone? Add a gourmet
touch with this appetizer.
 
Insalata Capresse with Raspberry Glazed Sea Scallops
 
8 sea scallops
1/4 cup olive oil
2 thick sliced tomato's
1 bunch fresh basil
2 tsp minced garlic
1/3 cup of raspberry vinegar
1/2 cup raspberry jam
2 tsp grated orange peel
 
The scallops cook quickly, saute in olive oil and garlic on high heat for about 7 min until they caramelize and turn golden brown. Flip them over and cook an added 3 min
 
The flavors in the pan will be mixed with the raspberry vinegar to make that awesome tasting sauce that you will pour over this appetizer.   
 
Remove the scallops from the pan and lower the heat.  Add the vinegar, jam, and orange peel and cook down till a thicker sauce that takes around five minutes of boiling. 
 
Stack the sliced tomato, garlic, fresh mozzarella and basil leaf.  Top with the sauteed scallops, then drizzle with the raspberry sauce.  The hot dressing will slightly melt the mozzarella and make a delicious glaze over your scallops.

Drumthwacket Foundation
 
It has been a great honor to have been given the privilege of catering this past holidays events at Drumthwacket House.  Governor Christie hosted a series of events from holiday cocktail parties for the New Jersey State Legislature to an intimate sit-down dinner for his close friends and supporters. Every event required exact precision and the most superb cuisine, each of the 8 holiday events was executed flawlessly and with the Governors highest praise.   Jacques was proud to have provided the services for these events last year for Governor Christie and the Drumthwacket Foundation.
