Secrets from a seasoned kitchen: Keep coffee fresh
Ever wonder what's the best way to keep coffee? The freezer? The fridge? Out of sunlight? In a vacuum-sealed canister? There are a lot of suggested methods, so let's settle the debate.
It's worth noting that coffee beans are taken from a living plant - so it has a limited shelf life. Because of this, coffee storage is important to ensure great flavor. First, to get the best flavor, brew it within two weeks of roasting and immediately after grinding. Second, buy your coffee in vacuum-sealed bags. Along the same line, avoid the self-serve displays at your local grocer because there is no telling how long the beans have been there. Finally, remember that air and moisture are the two main enemies of coffee. If you have fresh beans, store them at room temperature in an airtight container. If you have more beans that you'll use in a week, put them in an airtight container or a Ziploc with all the air removed and place the beans in the freezer. Once you take the beans out of the freezer, don't re-freeze them as you'll hasten flavor decay.

A cookbook that celebrates family and food
"A Well-Seasoned Kitchen" is a recipe treasury for all cooks who cherish creating delicious meals to nourish relationships with family and friends. The cookbook was written by Lee Clayton Roper and her mother Sally. The Claytons have long been known for effortless style and smart sensibility when it comes to home cooking and entertaining. So, when Sally began to suffer from the effects of osteoporosis and memory loss, it was natural for Lee to to engage her mother through memories of their shared times in the kitchen. The result of their effort is "A Well-Seasoned Kitchen," a cookbook of classic recipes for today's contemporary cook.
The hardcover cookbook includes 186 recipes, planning menus and helpful tips on 272 pages that feature delicious photos of some of Sally and Lee's favorite dishes. Renowned food photographer Laurie Smith, whose pictures have appeared in Saveur, Food & Wine and many other esteemed publications, shot the photos for "A Well-Seasoned Kitchen."
