the attributes of Caffeine
A study released from the University of Scranton (2005) indicated that caffeine is the no.1 source of antioxidants consumed by America. Thomas DePaulis, PhD., at Vanderbilt University says it is shown to reduce the risk of Parkinson's disease, diabetes and colon cancer. And we all know it is a performance enhancer, stimulating the brain and nervous system. Although caffeine can contribute to artery clogging and high cholesterol in some people, most recent studies show no major problems in healthy, nonpregnant individuals.
THREE BEAN and COFFEE CHILI

1/4 cup olive oil
3 large onions, chopped
6 large garlic cloves, minced
1/4 cup chili powder
1/4 cup ground cumin
2 tbsp dried oregano leaves
2 28oz cans crushed tomatoes (w/ puree)
2 tbsp honey
1 cup strong coffee
2 15oz cans black beans, rinsed/drained
2 15oz cans kidney beans, rinsed/drained
1 15oz can chickpeas, rinsed/drained
1 roasted pepper, seeded and chopped
1 cup chicken/veg stock (or tomato juice
or light beer)
1 tsp each: salt,cayenne pepper, cinnamon
(1) Heat olive oil in large pot over med-high heat. Add onions and saute' until tender, approximately8 minutes. Add garlic and saute' another minute.
(2) Mix in chili powder, cumin, and oregano. Cook 1 minute.
(3) Mix in tomatoes and the rest of the ingredients. Reduce heat to med-low and simmer 60 minutes uncovered.
(4) If consistency is too thin, mash a portion of the beans to thicken.
Makes 8-12 entree'-sized portion, but can be halved.
