Dear Cycling Friends,

Macaroni and Cheese. Meatloaf and Mashed Potatotoes. Spaghetti and Meatballs. With the temperature diving below zero the past few days, it's easy enough to turn to those comfort foods that invoke a sense of warmth and security.
But before you plunk that extra serving of tuna casserole on your plate, why not try getting completely out of your comfort (food) zone? I'm sure many of you, like me, vowed to eat more vegetables in the New Year. Chock full of vitamin A, C, and calcium, kale is one of the super greens. You know it's good for you, but really - would you want to eat it? In my family, we know it as guinea pig food, not people food.
But baking kale changes it from a wilted, bitter tasting green into something entirely different. Crisp and satisfying, thanks to the olive oil and salt. Even appealing to my kids, who tried it on a dare and ended up eating an entire cookie sheet full of kale chips. I knew you wouldn't believe me, so here's the photographic evidence.
Baked Kale Chips

1 bunch (about 6 ounces) kale
1 tablespoon olive oil
Sea salt, to taste
Preheat oven to 300°F. Rinse and dry the kale, then remove the stems and tough center ribs. Cut into large pieces, toss with olive oil in a bowl then sprinkle with salt. Arrange leaves in a single layer on a large baking sheet. Bake for 20 minutes, or until crisp. Place baking sheet on a rack to cool.
It might be cold outside, but our indoor cycling class participants are working up a sweat in our community room at the store. Guaranteed to be more fun than riding all by yourself in your basement!

Lactate Threshold Testing
Are you Training With All the Facts?

One of the most important parts of any structured training plan is to train at the correct intensity. Using a heart rate monitor or cycling power meter are both excellent methods to monitor intensity during workouts and races.
When using intensity monitoring devices, it is crucial to establish training zones based around your lactate threshold (LT), Sports Science research has shown that using lactate threshold to establish training zones is the most precise way to set up training zones.
